Pork belly, scored by hand, roasted slowly every morning until the skin goes glass. That crack is the whole point. No shortcut gets you there, only time and heat.

We went quiet here for a few months. The kitchen never did.

Same pork belly going in at sunrise, coming out with crackling you can hear across the counter. Same pate, pickled carrot and fresh herbs. Same corner at Coomera Square, next to Pizza Hut.

We stopped posting, not cooking. That one is on us.

So from here you will see the kitchen, not just the plate.
