Sixteen hours before this bowl reaches you.

Beef bones and marrow, onion and ginger charred first, star anise and cinnamon in late so they stay bright. Skimmed, not boiled hard. No stock powder anywhere in this kitchen.

That is why the broth tastes clean and still tastes of beef an hour later.

Pork belly, scored by hand, roasted slowly every morning until the skin goes glass. That crack is the whole point. No shortcut gets you there, only time and heat.

It goes into the banh mi, the rice plate and the noodle salad.

We went quiet here for a few months. The kitchen never did.

Same pork belly going in at sunrise, coming out with crackling you can hear across the counter. Same pate, pickled carrot and fresh herbs. Same corner at Coomera Square, next to Pizza Hut.

We stopped posting, not cooking. That one is on us.
