Last week we had the privilege of showcasing Lamb of Tasmania whole lamb in a butchers Masterclass for the next generation of chefs at JW Marriott Gold Coast Resort & Spa.

We spent some time in the kitchen with at last week.

When they were building out the menu, the sirloin wasn’t just picked and locked in.

There was a bit of back and forth, working through different cuts, different marbling, different options…
until it landed on something that fit the dish, the way it’s cooked and where it needed to sit on the menu.

That’s where we come in.

Working alongside the chef to get that balance right,
the right product, the right spec, the right price point,
so it holds up in service and still does what the dish needs it to do 👌

Because it’s not just about supplying meat.
It’s about getting it right before it ever hits the kitchen.
