🍫 Sourdough Sweet Potato Brownies

Ultra-fudgy, deeply chocolatey, and secretly packed with sweet potato 👀
You won’t taste it — it just makes these insanely moist.

Ingredients
• 110 g all-purpose flour
• 125 g sourdough starter discard
• 5 g salt
• 260 g semi-sweet chocolate chips
• 90 g unsalted butter
• 1½ tsp vanilla extract
• 2 large eggs + 1 egg yolk
• 180 g granulated sugar
• 110 g dark brown sugar
• 40 g cocoa powder (Dutch or regular)
• 200 g mashed sweet potato (very smooth)

Method
1. Preheat oven to 175 °C (160 °C fan). Line a 9x9 inch pan. (22x22 cm)
2. Melt butter and chocolate together until smooth. Set aside to cool slightly.
3. Whisk sugars, eggs and extra yolk until glossy. Whisk in sweet potato, sourdough discard and vanilla.
4. Stir in melted chocolate mixture.
5. Fold in flour, cocoa powder and salt just until combined.
6. Pour batter into pan and smooth the top.
7. Bake 32–36 minutes, until edges are set and centre is fudgy.
8. Cool completely before slicing.

Chewy Sourdough Pretzels 🥨

Ingredients
• 500g bread flour or plain flour
• 250g water
• 100g active sourdough starter
• 40g honey
• 10g fine sea salt
• Coarse salt, to sprinkle
• 2 tbs baking soda/bicarbonate soda
• 1 tbs brown sugar
• 1 egg (for egg wash)
• 1tbs water (for egg wash)

Method
1️⃣ Feed starter 12 hrs before baking until bubbly and doubled.

2️⃣ Make dough
Mix starter, water, honey + salt. Add flour and knead well until cohesive and smooth (6–7 min mixer or 10 min by hand).
Cover and rest at room temp 8–12 hrs or until it doubles in size.

3️⃣ Shape
Divide dough into 16 pieces. Roll into ropes and twist into pretzel shapes.
Cover and rise 30–60 min until puffy.

4️⃣ Boil
Heat oven to 230°C (446°F).
Boil water with baking soda + brown sugar.
Boil pretzels 20-30 sec per side, remove and place on tray.

5️⃣ Bake
Brush with egg wash, sprinkle salt.
Bake for 12-15 minutes until they develop a deep golden colour.

This works every time! Enjoy a fresh baked loaf any day of the week. I always bake more than I need, freeze the loaves and thaw out and refresh when I want fresh crispy baked bread.

This tip is handy if you buy or bake multiples loaves!!
