The Mighty Bacon and Egg Muffin

Had the urge to make something more than the local Golden Arches could provide.
This was so frikan yummy, Ronald needs to come try this We formed some beef patties up and seasoned with Heavenly Hell crack butter, while the seasoning was working it's magic on the beef we sparked up the PK Grills, added a chunk of oak split and let the smoke roll..
Added the Pattie's to the grill, while they were cooking we toasted up some English muffin's, added some cheese to the beef and now it was time to build this breakfast beuty.
It went a little like this,
Bottom bun
Cheddar Mayo
Beef Pattie and cheese
Maple bacon
Fried egg
Big Red Brand OG bbq sauce
And crownd with the top half with a little more cheesy mayo spread.
This was hands down the best breakfast muffin I have ever made, so tasty and not a heavy feeling afterwards.
Will be making again 👌

Rump and chimi tacos 🌮

Picked up this rump cap from .com.au , seasoned up with lil red lil beef seasoning.
Sent on the journey in bbq, first a little smoke from the wood chunks, than a fiery sear over the coals..
Rested in beef tallow and sliced up.
While the beef was resting we warmed up some corn tortillas, melted a little cheese on the base, added the yummy rump, a good lashing of chimichurri, sprinkle of feta and some fried shallots for crunch..
There was some banging flavours in this taco, from the twang of the chimi, the boldness of the beef, the mourish feta cheese and the yummieness from the shallots, all brought together in the ever reliable taquito corn tortillas.

Pizza Night

I truly find cooking pizzas such a fun experience, still so much to learn..
We fired the bbq up and loaded the pizza attachment in, got the oak pellets burning super hot and ready to cook..
The first pizza is Manuka ham, olive, capsicum and feta 🤗
The second pizza was chicken and pickled corn.. we pickled the corn, seasoned the chicken with sweet and savoury, a Smokey chipotle tomato base, a flick of feta and a fresh sprinkle of green onion on top.
These pizzas were so yummy, look forward to try perfect these a bit more..

Carne Asada Tacos 🌮

A little taco time this arvo, these were so tasty, can’t wait to make them again..
We seasoned a little scotch steak up with Godfather Magic and let all that flavour work its way into the steak.
While that was happening we chopped up a little tomato,onion,chive and a little vinegar salsa..
Got a pan ripping hot and seared this tasty looking steak till we were happy with it, rested with a little garlic butter and then sliced up.
While the steak was resting we crisped up some taquito corn tortillas with melting mozzarella cheese over them..
Was time to build these tacos, layed the tortilla out, a couple strips of steak, a pile of salsa, a little splash of salad lord dressing and finishing it off with a tickle of green day, jalapeno pineapple salsa verde hot sauce..
These tacos 🌮 ripped with flavour, texture and good times, can’t wait to make them again 👌

A tasty little Pork Belly 🤤

Caught up with and left feeling a little inspired..
Went out picked up this cute little belly, skinned it and seasoned with Pig Red Rub.
While the belly rub was going on, we flicked the switch on the bbq and got the oak flavour from the pellets circulating.
Time to add the pork for its smoke bath. We rolled it for 1 hour before boating it in a spicy maple butter for another 2 hours.
Once it probed tender we removed from the smoker and rested, then sliced up 🤙
This belly was so juicy (some would say moist) and full of flavour from the seasoning to the punch of the spicy maple butter..

Winter Chicken Stew 🍲

It’s that time of year when hearty dishes like this warm the soul on those cooler nights..
We seasoned some chicken thighs up with new sweet and savoury rub and browned them off on the stove top, along with onions and capsicums.
Once browned we added the rest of the ingredients such as potatoes, corn, tin tomatoes, carrots, chicken stock and round it out a pinch of salt.
While the pot was simmering we flicked the switch on the to get it upto temp.
We added the delicious pot of stew to the smoker to let the oak flavour wash over the food and build another level of flavour.
Once the stew had reduced and looked yummy, we removed and served up. A couple of ladles of stew to a bowl, some bread and round it out with a sprinkle of some pickled pico de gallo for crunch and freshness..
This bowl was so yummy, packed full of flavour from the seasoned chicken to the freshness from the pico, perfect for those cold nights around the fire or on the couch..

Picked up this little scotchie steak and seasoned with sizzling steak and lil red lil beef seasoning.
Sparked up the bbq reverse seared this cute little steak over the with steak weight..
When steak was upto temp we rested in a little garlic butter.
We sliced up this succulent piece of beef, it was so tender and flavourful..
