Some nights you don't have it in you to cook a "proper" dinner.
So we stopped trying to.
These are pan-fried tortillas - crispy on the outside, loaded on the inside, on the table in under 20 minutes.
Made with pantry staples and FROOM mince.
No-one will know the difference.
Serve with delicious toppings: 1 whole tomato diced tomato, 1 diced cucumber, 2 cups iceberg lettuce, shredded, guacamole, and limes cut into wedges for everyone to load up their own.
One better dinner. That's the whole plan. Real food doesn't have to be complicated to be real. It just needs to be on the table.

Ingredients
300 grams FROOM mince
2 tablespoons taco seasoning
1 small can corn kernels
1 small can black beans, drained
1/2 red pepper, diced
10-12 small soft tortillas
1 cup shredded cheese
2 tablespoons olive oil
1 diced tomato
1 diced cucumber
2 cups iceberg lettuce, shredded
Guacamole
2 limes, cut into wedges
Prepare the mince
- Add 300 grams FROOM mince and cook, breaking it up, for 4 minutes until browned.
- Stir in 4 tablespoons of taco seasoning, then add 1 small can of corn kernels, 1 small can black beans, drained, and 1 red pepper, diced
- Stir until the veg is heated through
Fill and fold the tortillas:
- Lay each of the small soft tortillas flat. spoon the mince filling onto one half of the tortilla
- Sprinkle over some shredded cheese then fold in half to make a taco shape.
Pan-fry until crunchy:
- Add 2 tablespoons olive oil to a pan.
- Fry the folded tortillas in batches over medium heat, 2-3 minutes per side, or until golden and crisp with the cheese melted inside
