Leeann's Fried Aquna Cod in Rice Flour

You’ll need:
2 x 200g Aquna Murray Cod fillets – we are selling these at our Riverina Field Days stall today.
2 tbsp fish sauce
1 cup rice flour
1L peanut oil to fry

Method:
Simply dice, marinate, crumb, and fry!

Try Josh Niland’s crumbed Aquna Murray Cod this Easter!

Golden crumb, delicate white flesh, and a fresh herb salad with tartare and lemon. Perfect for Good Friday, Easter lunch, or a relaxed autumn dinner.

You’ll need:
4 x 200g Aquna Murray Cod fillets – available from our retail store.

Method:
1. Tartare sauce: Mix all ingredients and chill.
2. Prepare fish: Coat fillets in flour, dip in egg, then breadcrumbs.
3. Cook fish: Heat half the ghee, fry 2 fillets ~4 min per side until golden. Rest on a wire rack, then repeat.
4. Shallot dressing: Mix salt, sugar, shallot; rest 10 min, then stir in oil and vinegar gently.
5. Salad: Toss herbs, watercress, rocket, and lettuce with dressing. Serve alongside fish.

Dip the Aquna Murray Cod fillet into the flour and ensure it is lightly coated. Add the floured fillet into the egg mixture, followed by the breadcrumbs, pressing gently to coat it well. Place on a plate and repeat with the remaining 3 fillets.
