The theme this year is ‘Quality on a budget: Affordable meals featuring Queensland’s finest produce’. 🐟🦐 Fisheries Queensland have teamed up with renowned chef Umar Ngyuen & Matt Golinski, and we're supporting Australian Sustainable Barramundi to help bring you budget-friendly recipes for the whole family. Our team will be on stage tomorrow alongside industry experts at the demonstration to explain how science and innovation contribute to making Queensland produce the best in the world! Expect to see locally grown ingredients and the freshest seafood. Join us in the Woolworths Cooking Pavilion from 12-16 August and take home recipes using local Queensland produce! Good luck Raquel!

Passionate about aquaculture, Raquel Layton is combining science, farming and community work to drive sustainability in the food sector. 🐟💪

Through her Certificate III in Aquaculture, she’s gaining hands-on experience at Spring Creek Barramundi in Townsville.

Raquel’s journey into aquaculture began with her undergraduate studies in biology and marine science, where she developed a strong interest in hands-on farming. 🌊

Today, she’s not only contributing to the industry but also mentoring veterinary students and fellow technicians, championing diversity and innovation.

Raquel is a North Queensland regional finalist in the Trainee of the Year category at the 2026 Queensland Training Awards! 🌟

We are absolutely thrilled to announce that our very own Raquel Layton is a Skills for Queensland 2026 Queensland Training Awards Finalist! 🏅 Raquel was nominated for her outstanding dedication to her role after having recently completed her Certificate III in Aquaculture through Seafood & Maritime Training. Completing her qualification unlocked a deeper technical understanding of fish health, earning Raquel a promotion to her current role as Water Quality and Fish Health Technician. With an international background in marine science, she brings invaluable expertise to our farm while actively mentoring junior staff. Please join us in congratulating Raquel on being named a finalist for the Bob Marshman Trainee of the Year and wishing her luck at the awards event at the end of this month! 👏🐟

Last minute Easter recipe inspo 🐟🫑🫘🍅🌿

Barramundi with Peperonata & Cannellini Beans
Ingredients (Serves 4):
4 Spring Creek Barramundi 100g portions, skin on
2 red & 2 yellow capsicums, sliced
2 small red onions, sliced
1/3 cup extra virgin olive oil
Sea salt & freshly ground black pepper
2 tbsp baby capers, rinsed
1 can cannellini beans, drained
1 tbsp sugar
1/3 cup red wine vinegar
8 ripe tomatoes, halved
6-8 basil or mint leaves

Method: Roast Tomatoes: Preheat oven to 200°C. Toss tomato halves with olive oil, salt, and pepper. Roast until soft (20-25 mins). Blend half and set aside.

Prepare Peperonata: In a pan, sauté onions in olive oil until softened. Add sliced capsicum, season, and cook for 5 minutes. Stir in blended tomatoes, roasted tomatoes, cannellini beans, and capers. Add vinegar and sugar, stir, and simmer uncovered until the liquid evaporates (about 30 minutes). Stir in basil.

Cook Spring Creek Barramundi: Season barramundi with salt, pepper, and a drizzle of olive oil. Heat a non-stick, oven-proof pan over medium-high heat. Place fish skin-side down and press gently for 60 seconds to keep the skin flat. Cook for 3 minutes until the skin is crisp, then flip and cook for a further 2–3 minutes, depending on thickness. Rest skin-side up for 4 minutes before serving.

Serve: Plate the peperonata, top with barramundi skin side up, and garnish with fresh lemon zest and a lemon wedge. 🍋🐟
