A waterfall of Shiraz! What a beautiful thing!

This Shiraz is 21 days old.

The fermentation is finished, the initial flow of now young wine celebrating its 21st will be followed by the skins and are pouring into the airbag press. Then into tank.

You will be able to taste it in bottle approximately June 2028.

An update on Flynn’s Sangiovese…

The glass of Sangiovese juice that is currently fermenting, its looking good, smells and tastes very nice, showing great potential.

It has a little bit of alcohol and a lot of sugar left as the yeasts are still working hard eating the yeast and turning out alcohol.

This fermentation is having a semi carbonic maceration. This is when a portion of the ferment takes place inside the actual berries. It can give an enhanced fruitiness and softer tannins.

Available in about two years!!

Another day in the winery at Flynns and a new adventure..Greg’s first vintage of Grenache Gris.

Greg loves experimenting with something different.

This variety being a white wine, with a bit of an off white grey colour, is related to the red wine variety you likely know being Grenache.

The first picture shows you the interesting colours. Some green, some pinkish.
The next photo shows the wines flowing from the press.

A couple who were lucky enough to come in for a tasting were able to watch the fruit go into the press.

The photo of the juice shows you the colour. Nothing like the finished wine.

More incredible wine making processes to come.

The next tale of our early picked Shiraz destined for this vintage Rosé…here we are fermenting.

The pressed juice has been chilled in the cool room for a few days then racked, pumped the juice off the gross lees which are the suspended solids that fall to the bottom of the tank, making the juice clearer.

Then we add a particular yeast strain to start fermentation, a bit of DAP, yeast nutrient to keep the little yeast happy and not producing any S02. Rotten egg gas, not good in a wine!!!

Now waiting on our Grenache fruit to come in, ferment and join its Shiraz partner to compliment the blend.🍷🥂

The first fermentations of this vintage!

The bubbling brownish looking soup is actually Fiano and looks absolutely nothing like the finished wine.

It makes an amazing transformation over the next month or two to something resembling that crystal clear light straw, fragrant, citrus, zesty refreshing summer drink.

Vintage continues on at Flynns….

Early picked Shiraz for Rosé.

We pick the Shiraz fruit for Rosé earlier so that the sugar level is lower meaning lower alcohol and more delicate palate and fruit character. Also lower pH which means it’s more acidic and the resultant wine is cleaner, crisp and zesty on the palate. Just what we want for a warm summer’s evening.

Now waiting on the Grenache fruit to attain the ripeness sweet spot for again early picking for blending with the Shiraz.

Fingers crossed all goes well. What could go wrong!!!! Mother Nature may like a say in it!!

Just a bit of interest in the grape pressing.
The two glass containers show the amazing difference in the pressure applied to the grapes in the press.

The lighter coloured juice on the left was pressed at 0.5 bar and the right much darker juice was pressed at 1 bar. The higher pressure on the skins (which is where the colour of reds comes from) with the second press minutes later has extracted that darker colour you see.

The first fruit of vintage 2026 coming into the winery yesterday!

Fiano that beautiful Italian variety originating from the Campania region of Italy.

The fruit came in late yesterday after hand picking.

I have stored it in our pre chilled cool room for the night. Ready for a cool pressing tomorrow to tank and back into the cool room to chill out and drop it “lee’s” (suspended solids for clarity) then the magic of fermentation, with the addition of a cultured yeast, to enhance aromatics and palate texture.

Crisp, zesty, citrus, pear, a little texture on the palate. Think oyster’s natural or with a subtle Asian vinaigrette.
