When two worlds collide through an inexorable passion for craft, the result is an alchemy that simply makes sense!
Our endless pursuit of barrels with history and character led us to source and hand-select twelve exceptional casks. Each was carefully de-charred and re-charred to our preferred toast and char profile before being filled with a selection of dark spirits.
Once the casks had reached the profile we were chasing, they were freshly decanted, delivered to Uraidla Brewery and immediately filled with their stout. As the beer matured, it drew character from the whisky-soaked oak, taking on layers of rich spirit character while leaving its own deep, roasted stout influence behind in the timber — creating an entirely new chapter in each barrel’s story.
When the stout was finally canned, the barrels made their journey back to us, ready to be filled once more — this time with whisky destined for a rich stout cask finish.
A beautiful circle of craftsmanship, shared between Cut Hill Wall Distillery and Uraidla Brewing. Every fill leaves its mark, every maker adds their signature and every barrel tells another chapter of its story 🥃
Nose:
Vanilla and oak lead the nose, surrounded by layers of dark chocolate, caramel and roasted coffee, with dried apricot and orange adding a subtle fruit richness.
Palate:
Butter and oak arrive upfront, giving way to an enveloping, lingering stout character. Dark chocolate and roasted coffee unfold alongside dried apricot, subtle spice and burnt toffee.
