The release of Allodola Whisky marks a defining moment for our distillery. It celebrates a rare and meaningful dichotomy: the meeting of two founders—Bill Lark AO, pioneer of the Australian whisky industry and the Italian founder of Cut Hill Wall Distillery- Giuliano Ursini. Together, they represent a uniquely Australian story shaped by heritage, craft and vision.
The name Allodola—the Italian word for Lark—is both tribute and connection.
Bill Lark AO was guest of honour at the launch of this special release, as well as the naming of our Allodola Spirits Still. We are proud to share his words on tasting the whisky:
“A wonderful shock. Beautifully balanced cask character… Elegant.”
Those words now guide us.

Nose
Malt, oak and vanilla supported by dark and fruity notes imparted by muscat – including sultana, dates, dark chocolate, dehydrated apricots and fruit chutney.
Palate
This whisky offers a delightfully balanced palate – rich with sultana and dark chocolate followed by dehydrated apricot and malt. A balanced fortified presence leaves a pleasant lingering oiliness.
