The release of Allodola Whisky marks a defining moment for our distillery. It celebrates a rare and meaningful dichotomy: the meeting of two founders—Bill Lark AO, pioneer of the Australian whisky industry and the Italian founder of Cut Hill Wall Distillery- Giuliano Ursini. Together, they represent a uniquely Australian story shaped by heritage, craft and vision.

The name Allodola—the Italian word for Lark—is both tribute and connection.

Bill Lark AO was guest of honour at the launch of this special release, as well as the naming of our Allodola Spirits Still. We are proud to share his words on tasting the whisky:

“A wonderful shock. Beautifully balanced cask character… Elegant.”

Those words now guide us.

Bill, your legacy continues to inspire our pursuit of truly elegant whisky.

Nose
Malt, oak and vanilla supported by dark and fruity notes imparted by muscat – including sultana, dates, dark chocolate, dehydrated apricots and fruit chutney.

Palate
This whisky offers a delightfully balanced palate – rich with sultana and dark chocolate followed by dehydrated apricot and malt. A balanced fortified presence leaves a pleasant lingering oiliness.

Introducing our very first single-cask release under Cut Hill Wall Distillery — a meticulously selected, confectionary ex-Mead Cask bottled at 49.4% ABV.

This small-batch whisky presents captivating notes of hot cross buns, warm spices, vanilla and honeycomb, finishing with a balanced medium warmth.

An invigorating beginning to what will become our future line of single-cask releases.

NOSE
Cinnamon, nutmeg, vanilla bean, citrus peel, honeycomb, light butter, malt sweetness and hot cross buns.

PALATE
Baked apples, cinnamon, hot cross buns, danish pastry, buttered pastry, vanilla slice and light honey sweetness, with a medium finish.

Small batch. Big character.

INTRODUCING- Cut Hill Wall Distillery Foundation Stone ex-Mead, ex-Australian Red Double Cask whisky 47.3%

This whisky encapsulates our identity – Australian Red wine and Mead Cask.

Casks are sourced from local-Australian regions for this, our forever release. Particular casks are seasoned with local McLaren Vale liqueur mead which adds fruit cake to the palate.

Spiced dates and pudding are overlaid and supported by dry red wine varietals in predominantly American oak casks, which are carefully aged in the drying conditions of South Australia’s maritime micro-climate of the Fleurieu Peninsula.

Delicious on the nose, palate-central in the mouth, and lingering on the finish.

Our first release, conducive to filling a collectors shelves or a nightly boilermaker, marks our line in the sand of where quality begins.

At Cut Hill Wall Distillery, we’ve lived this journey: the long hours, the challenges, and the triumphs that come from turning raw ingredients into something extraordinary.

Help us celebrate our milestone with guest and whisky icon Bill Lark, hosted by our Head Distiller Brad Rhen, and enjoy a three-course lunch by among our copper stills and whisky barrels — each telling a story of craft and passion.
