Rum city right now!

Double retort/thumper Rum, traditional Caribbean style with a few Sumpoynt twists!

Twist one: Seawater, ???

Twist two: three different yeasts used, independently or co-pitched over 6 different fermentations.

Twist three: up to 11 day ferments, the shortest being 8 Days.

Twist four: Fermentation start temperatures; first 2 fermentations 23°C, middle two fermentations 26°C, last two fermentations 30°C.

Complexity is what we do, limited production is who we are, and we never make the same whisky/rum/whiskey twice!

We are rare, we are special, we are not "World Class" we are better than this, we are "Universe Class!". 😁
