It’s not just about what’s available at the markets — it’s about selecting the right product.

Every day our team is assessing quality, consistency, size, colour and shelf life to ensure we’re supplying produce we’d be happy to put on our own plates.

It’s the attention to detail behind the scenes that helps kitchens deliver consistency on the plate.

Eggplant is one of the standout buys in the market right now, with excellent supply across standard, Lebanese, baby, striped and Thai varieties.

Its versatility makes it a menu favourite — grill it, roast it, char it over coals or transform it into a rich, smoky babaganoush.

Chef Tip: Roast whole eggplants over an open flame, then finish with tahini, olive oil, sea salt and a squeeze of lemon for a simple, flavour-packed dish.
