So……….it’s been awhile 🤗
Since announcing maternity leave in 2020, I have been pregnant again and gave birth to our second son in March this year (I also have a hubby that is away half the year). Needless to say there hasn’t been much cake making, and unfortunately if I’m not baking often it’s just not worth me buying/holding ingredients, decorations etc as it results in a lot of waste 💸. So sorry to those that have contacted me and I haven’t been able to take on your orders, I really appreciate the enquiries and your understanding ❤️
However, this week I made this beautifully simple but luxurious cake for a little family birthday celebration.
It’s been nearly 18 months since I last made this cake (well any celebration cake really), and I don’t know why I’ve waited so long. It is honestly probably my favourite chocolate cake. Everyone loves it. It’s delicious, moist and actually good for you. It even contains a fruit 🥑.
It’s gluten-free, grain-free, dairy-free, refined sugar-free, plus full of health benefits, antioxidants and heart-healthy essential fats.
We have a family member that’s a type 1 diabetic who’s also said it had very little impact on their blood sugar.
It’s a cake that aligns with the approach I take to food in my home, it was the cake I made for my sons first birthday, and it feels so good knowing I’m nourishing whoever is enjoying it 🥰
We served it with homemade mixed berry and chai coulis and vanilla cashew cream (which I wish I took a picture of cause they looked super cute in their terracotta pots). It would also look lovely simply decorated with some fresh berries or flowers, or even childrens figurines (I’m thinking trucks or dinos. Definitely a boy mum here).
So it got me thinking 🤔
For the time being I am going to make this cake available to anyone that may need/want a cake meeting these specs (obviously only if I’m in town and available). I’ve missed making cakes, especially for those that have trouble finding cakes elsewhere that they can eat, so hopefully I can make things easier for both me and you by offering this one.
