Irrewarra Sourdough - Artisan Sourdough baked by traditional methods, Handmade Granola, Traditional ANZAC Biscuits and Panforte.

We are a wholesale artisan bakery producing sourdough breads using time-honored tradition. Shaped by hand and baked on the stone floor of the oven, every loaf is the individual expression of our bakers' hands. we do not cold ferment our breads using refrigeration so the bread is not overly sour. Our bread completely natural and is the culmination of a 30-hour fermentation and proving process. We also make a range of all natural handmade granola, of Australian biscuits and an Italian-style chocolate Panforte with figs and raisins. we ship direct to retail stores throughout Australia. We use only the best natural ingredients.

At Irrewarra, we don’t use emulsifiers or preservatives in our bread (or any of our products).

We only use Australian flour, filtered water, our original sourdough starter, and sea salt. Nothing else.
That’s why our bread tastes the way it does, and it’s also why, on the odd occasion you don’t devour your entire loaf in one sitting, your Irrewarra loaf’s shelf life cannot compete with other commercial breads you’ll see in supermarkets.

The lack of emulsifiers, oils, and other additives means that there is nothing to prevent the natural evaporation process in our breads - hence why, when our bread starts to go stale, it dries out, and why we can’t wrap it up in plastic because the natural moisture fast-tracks the natural process of mould.

Thankfully, we’ve been doing this a long time, and we’ve picked up a few tips and tricks along the way on the best ways to store, revive, or find alternate uses for your Irrewarra loaves.

Mince tart season is almost here.

We’ve been busy in the bakery getting this year’s batches ready, filling our buttery pastry shells with rich fruit mince and packing them up in their fresh new look.

Our Christmas mince tarts will start making their way into stores this week, ready for festive tables, afternoon cups of tea and those who know there’s no reason to wait until December to open the first box.

Made at our bakery in Irrewarra, just outside Colac in regional Victoria, using the same traditional methods and quality ingredients we’ve always believed in.

We’re now stocked at The Fruiterer's Wife in Port Melbourne, making it even easier to pick up Irrewarra sourdough bread, granola and biscuits alongside fresh produce, pantry staples and plenty of good things for the kitchen.

A small bakery hack that makes a very big difference.

When you’re working with the quantities we do at Irrewarra, even something as simple as zesting fresh citrus can become a serious job. So, our trusty KitchenAid gets called in to help us move through kilos of citrus quickly, while still using the fresh ingredients and hands-on processes that go into everything we make at the bakery.

With production about to ramp up, the kitchen is getting busier, the mixers are working overtime and we’re starting to prep some of the ingredients that will carry us through the next few months.

Fresh citrus, a very useful KitchenAid attachment, and one less job for tired hands. Sometimes the best bakery tricks are the simplest ones.
