Part 2 of my last reel busting fondant cake storage myths!
This geode cake features a fondant stone texture with marbling, sugar roses and a geode adorned with rock sugar instead of isomalt crystals.
I’ve been there—melting isomalt, pouring it onto silicone mats, and breaking it into crystal shards. But then I discovered a simpler alternative.
Why I prefer rock sugar for geode cakes:
✨ More affordable and readily available than isomalt
✨ Tastes like actual sugar and is chewable
✨ No risk of biting into rock-hard isomalt pieces hidden in icing
That said, I still use isomalt for certain decorations like sail toppers where it truly shines.
