We made this for dinner this week and it was so good we had to share it. ๐Ÿคค

A baked sweet potato loaded with sour cream, spring onions, tomato, cucumber, red onion, a squeeze of fresh lime and topped off with crispy bacon.

Simple.
Quick.
Packed with flavour.

The best part? It didn't take long to make and there weren't any leftovers to clean up afterwards, which is usually a pretty good sign. ๐Ÿ˜„

Sometimes the tastiest meals aren't complicated. Just fresh ingredients put together well.

Let's talk about one of the most underrated vegetables around...

The humble parsnip. ๐Ÿค

Most people walk straight past them, but when the weather cools down, parsnips really come into their own.

Roast them alongside your potatoes and carrots and they develop a beautiful natural sweetness with crispy caramelised edges. They also make a fantastic addition to soups, stews and mash.

If you've never really cooked with parsnips before, this is your sign to give them a go.

They might not be the prettiest vegetable in the box, but they're often one of the tastiest.

We've got a theory.

Every household has a secret fruit thief.

You fill the fruit bowl to the brim on Sunday.

By Tuesday it's almost empty.

Nobody knows who ate it.

Nobody remembers eating it.

And yet somehow it's gone.

Meanwhile, the vegetables are sitting patiently in the fridge wondering when their turn is.

As people who spend our days surrounded by fresh produce, we find these things fascinating.

One thing is certain though. Whether your kids are fruit fanatics, vegetable negotiators or professional snack hunters, getting fresh food into them is never wasted.

So here's to the parents doing their best, one lunchbox, one fruit bowl and one dinner battle at a time.

A funny thing has happened over the last few years.

The more time we've spent around farmers and fresh produce, the less we've found ourselves shopping in supermarkets.

When you see vegetables coming straight from growers, it's hard not to notice the difference.

The freshness.
The flavour.
The shelf life.

Then there's the reality that so much of the modern supermarket is dedicated to ultra-processed food. Entire aisles filled with products that barely resemble the ingredients they started with.

We're not perfect, and we're certainly not saying nobody should shop at supermarkets.

But we do believe that eating more real food and less manufactured food is one of the best things we can do for ourselves and our families.

That's what drives us every week.

Fresh produce.
Local growers.
Real food.

Many people eat the same vegetables every week without realising it.

While broccoli, carrots and spinach are great foods, our bodies benefit from variety.

Different vegetables feed different bacteria in the gut. The more diversity in your diet, the more diverse your gut microbiome becomes.

Research now suggests aiming for around 30 different plant foods each week. This includes fruits, vegetables, herbs, nuts, seeds and legumes.

It sounds like a lot, but when you start mixing things up it becomes surprisingly easy.

Variety is one of the simplest ways to upgrade your nutrition.

A quick update on our fuel levy.

While fuel prices have eased a little recently, many of the farmers and growers we work with are still dealing with the flow-on effects of higher fuel and transport costs.

We're also conscious that the current fuel excise relief is due to end on 30 June, which may put upward pressure on fuel prices again from 1 July.

For that reason, we'll be keeping the fuel levy in place just a little longer.

We know that the cost of living is affecting everyone right now, and we want you to know that we're reviewing the levy regularly. As soon as it's sustainable for us and our growers, we'll remove it.

Quick question for the parents...

Is there a secret meeting where children decide which fruit they love this week?

Because last week it was bananas.

This week bananas are apparently offensive.

Last week apples were "boring".

Today apples are everyone's favourite.

And don't even get us started on avocados. One day they're too hard, the next day they're too soft, and for approximately 17 minutes each year they're perfect. ๐Ÿฅ‘๐Ÿ˜‚

Parenting keeps you humble.
