🍻 New Releases 🍻

🛸 Echo Base (x The Mad Viking Brewing Co) – NEIPA 6.8% 🛸

Inspired by homebrew, this one comes from the Sydney B**r Week Pro Am 2026, which pairs homebrewers with commercial breweries. We were paired with Arron Stephenson, The Mad Viking, who brought his NEIPA recipe to our 50hL brewhouse. Arron only went and won the whole damn competition.
Citra T90, Citra Dynaboost Dip Hop, Krush Hyperboost and Nectaron bring mango, passionfruit and juicy citrus, backed by ripe peach, nectarine and fresh lime. Dangerously easy drinking, with enough hop firepower to take out an Imperial Walker. Arron brought the recipe, we brought the big toys, and the result is a champion.

🧪 Jumbo’s Secret Stuff – West Coast IPA 6.5% 🧪

Our Head Brewer Jumbo dug up a sessionable West Coast IPA from his early homebrew days, and we brewed it properly in collaboration with his younger, less experienced and presumably more hair-covered self. Nobody knows what’s in it. Not even Jumbo. (Actually, we do.)
Citra Hyperboost, Simcoe, Amarillo and Columbus sit on a light malt base for punchy citrus, ripe grapefruit, bright orange and dank pine, with a resinous bitterness and a crisp, dry finish.

Available online now, as well as pouring at all our venues from 5pm today.

7 years of winging it, really good b**r and really good people.
If you headed into the venues over the weekend, we’d like to formally apologise for our croaky voices. Turns out we’re a noisy bunch when we’re celebrating, and we had a lot to celebrate.
Seven years in and we still reckon the best thing about making really good b**r is the people you get to share it with.
Worth it. 🍻🎉

🍻 7th Birthday Releases 🍻

Almost completely toilet trained and spending most nights in our own beds. To celebrate, we’re revisiting four b**rs that take us right back to the beginning, rebrewed and in 500mL cans for the first time ever. Apparently we’ve grown up enough to be trusted with bigger cans.

🌲 American Pale Ale - 5% 🌲

The OG, and the b**r that started it all. Inspired by Sierra Nevada’s Pale Ale, we brewed our very first batch on our 12hL kit in Katoomba. Little did we know we’d one day host Sierra Nevada in the Blue Mountains and brew a b**r with them. Citra, Centennial and Simcoe bring bright citrus, grapefruit, pine and a crisp malt backbone.

📼 Be Kind Rewind – NEIPA 7.3% 📼

Our second NEIPA in the Limited Release program, named after our Katoomba brewery’s life as a Civic Video store. A massive dry hop of Sabro and Vic Secret delivers a hazy, pillowy-soft IPA with juicy tropical fruit and creamy coconut.

🥛 Hill People – Oat Cream IPA 6.8% 🥛

Our first ever Oat Cream IPA, and the one that paved the way for a style synonymous with Mountain Culture. Sabro and Citra bring creamy coconut, mango and citrus in a lush, ridiculously moreish package. It also gave us our first packaging mistake: 355mL labels on 500mL cans.

🌴 Back To Cali – West Coast IPA 7.6% 🌴

Our first ever West Coast IPA, named after the playlist DJ was listening to on brew day. Centennial, Columbus, Mosaic and Amarillo deliver grapefruit, pine, resin and a crisp, bitter finish. No haze, no nonsense.
Seven years of you lot backing us and drinking our b**rs. We wouldn’t be here without you. Come celebrate at our birthday parties across the venues this weekend, or grab the mixed birthday pack online.
