🥞 Fluffy Yoghurt Pancakes

Ingredients:
1 cup self-raising flour
1 cup Queensland Yoghurt
1 egg
1/2 cup milk
1 tbsp honey or sugar (optional)
Pinch of salt
Butter or oil for cooking

Method:
1. In a bowl, whisk together yoghurt, egg, and milk until smooth.
2. Add flour, salt, and sweetener (if using). Stir gently until just combined — don’t overmix!
3. Heat a non-stick pan over medium heat and lightly grease with butter or oil.
4. Pour 1/4 cup of batter per pancake into the pan. Cook until bubbles form on the surface, then flip and cook until golden.
5. Serve with fresh fruit, extra yoghurt, or a drizzle of honey.
