Soup season has arrived, and there’s nothing more comforting!

This week’s recipe for Fennel, Leek & Potato soup (adapted from It's A Veg World After All) is creamy and delicious - ideal for showcasing our organic locally grown spuds! Perfect for chilly winter days, it’s a simple, nourishing meal that brings warmth and comfort with every spoonful 🥣

Come in and see us for all your ingredients 😊

Ingredients:
1 Tbsp extra virgin olive oil
20g butter, coarsely chopped
1 large fennel bulb, coarsely chopped, fronds reserved
2 leeks, washed and diced
1 large onion, coarsely chopped
3 garlic cloves, thinly sliced
1 tsp fennel seeds, coarsely crushed
300g organic potatoes, peeled and diced
800ml chicken or vegetable stock
240ml pouring cream, plus extra to serve
Salt & ground pepper to taste
For garnish - shaved parmesan, fresh fennel fronds, chopped herbs (dill or parsley)

1. Heat olive oil and butter in a large saucepan over high heat. Add fennel, onion, leek, garlic and fennel seeds and sauté, stirring occasionally, until tender and starting to caramelise (4-6 min).
2. Add potato and deglaze pan with water. Add stock, season to taste, cover and bring to the boil, then boil uncovered and stirring occasionally until potato is tender (around 15 min).
3. Add cream, bring back to the boil and simmer until potato starts to break down (2-4 min).
4. Season to taste and blitz in a blender, or with a hand-held blender, until smooth, adding a little extra boiling water to thin it a little if necessary.

Serve hot topped with fennel fronds (plus parmesan and herbs if using), extra cream and a crack of black pepper - with buttered sourdough toast on the side... YUM!

Save the Tasmanian Devil Appeal is coordinated by the University of Tasmania. The appeal’s primary goal is to raise funds to support the urgent research and conservation needs of the endangered Tasmanian Devil ❤️

Capsicums are our star of the show this week - bringing vibrant colour and sweet flavour to winter cooking! 🫑

This week, we’re celebrating these versatile veggies with a warming Onion & Capsicum curry recipe (by Cook With Kushi) that’s rich, fragrant, and full of goodness. Delicious served hot with any Indian roti, chapati, dosa, or steamed rice!

Time: 25min Serves: 4

Ingredients:
2 Tbsp vegetable oil
1 tsp cumin seeds
½ tsp turmeric powder
1 Tbsp cashews
¼ tsp asafoetida hing
1 large onion, finely chopped
2-4 garlic cloves, chopped
2 chilies, chopped
1 inch ginger, grated
2 tomatoes (or 3 Tbsp tomato paste)
2 capsicums, chopped
½ tsp garam masala powder
½ tsp chilli powder
Salt to taste

1. Heat oil in a non-stick pan on medium heat. Add cumin seeds, turmeric powder, cashews, and hing, and saute until the cashews become light golden in colour.
2. Add onion, garlic, chilies, and ginger and saute till onion becomes translucent for about 6-8 min. You can add salt while sauteing the onion, as this makes it cook faster.
3. Now, add chopped tomatoes and cook until they become soft.
4. Add capsicum, garam masala, chilli powder, water for desired consistency, and salt to taste, and cook for about 5 minutes till the capsicum is cooked.
5. Simmer it for 3-5 min so that the flavours blend.
