Here's an easy, over-night Rock Oyster dressing for your summer table!
Crafted by Chef Hao Chen of Canberra, this recipe was a hit in the 2024 Cooking Demo program.
🦪 Ingredients
• 12 Rock Oysters, shucked and cleaned
• 1 pickled cucumber
🫙Tosazu dressing:
• 500ml Rice vinegar
• 400g Sugar
• 60ml Soy sauce
• 10g Bonito flakes
To make the dressing:
1. Heat up vinegar, soy and sugar until warm (approx. 50 degrees celsius), then add bonito flakes.
2. Chill and then strain out bonito flakes.
3. Finely dice cucumber and leave in a separate container with some Tosazu dressing overnight.
To plate:
1. Settle the freshly shucked Rock Oyster onto a bed of crushed ice/rock salt.
2. Drizzle approximately 20ml of dressing onto each oyster.
3. Add 4-5 pieces of pickled cucumber to each oyster and serve.
