Bumper harvest of beautiful tropical oysters ready for the Mackay Riverside Market this afternoon 🍄❤️
Did you know we don’t just grow culinary mushrooms? We also grow natural medicines like this beautiful Native Reishi, Ganoderma steyaertanum 😍🍄
More and more research is being done on the medicinal benefits of mushrooms, from immunity boosting and anxiety relief (Reishi), easing the effects of chemotherapy (Turkey Tail) and dementia and alzheimers prevention and treatment (Lions Mane). All wood eating mushrooms (including Oyster Mushrooms) are also chock full of Beta-glucans which are anticancer, anti-diabetic and reduce the risk of cardiovascular disease.
At our farm we mainly focus on native varieties, like this Native Reishi and our Native Lions Mane (Hericum coralloides), but we also grow Turkey Tail, Shiitake and Wood Ear too

The mushrooms are really loving all this extra humidity, we have a massive harvest ahead of us for the Mackay Riverside Market this afternoon! (I’m already dreaming of that warm freshly baked HillBilly Bakehouse sourdough)
Our garden has absolutely sprung to life too, with colourful cluster’s popping up everywhere 😍 If you want mushrooms in your garden too we’ll have our spent substrate mushroom compost available to collect from our little urban farm tomorrow - $20 for 60L.

One of our favourite things to do with Oyster Mushies… Vego Fried Chicken! They are super delicious and so easy to make (and I'd like to think they're a little more healthy than KFC)
Fried Oyster Mushrooms (Vego Fried Chicken)
Ingredients
Oyster mushrooms
1 ½ cups plain flour
1 ½ teaspoon paprika powder
1 ½ teaspoon garlic powder
1 ½ teaspoon onion powder
1 teaspoon turmeric powder
¼ teaspoon cayenne pepper (add more or less depending on how spicy you like it)
1 teaspoon salt
Cracked pepper
Oil for frying
Pull apart the individual caps from each cluster and trim the stems as needed
In a large bowl, add the flour and all the spices, salt and black pepper. Mix together until well combined
In a second bowl, take ⅓ cup of the flour and spice mixture and add ¾ cup of water. Whisk together to a smooth batter consistency
Dip each mushroom into the wet batter mixture then into the dry batter. Double coat each mushroom back into the wet batter and then back in the flour mixture, making sure the mushrooms are fully coated in flour
Heat oil in a pot over high heat and carefully drop mushrooms into the oil one at a time in batches. Don't overcrowd the pot, you can fry a few at a time depending on how large your pot is. Let them fry for a few minutes until nice and golden brown
Remove and place on paper towels and blot to remove excess oil. Place on a cooling rack to keep crispy until the rest are done. Enjoy with your favourite dipping sauce!

Stir Fry Noodles with Pink Oyster Mushrooms
I’ve had a couple of our amazing customers tell us about this recipe, so now Pink Oysters are back in season I finally gave it a go. It’s so quick and simple and the flavours really amplify the Pink Oysters and highlight their unique texture.
The hardest part of this recipe was finding the Shaoxing wine, I spent 5 minutes searching the international aisle before I finally googled it and realised it was Chinese Cooking Wine, literally right next to the Sesame Oil 😂
Stir Fry Noodles with Pink Oyster Mushrooms
Prep and cook time: 15 minutes
Ingredients
1 tbsp vegetable oil
300g fresh thin egg noodles
1 small thumb of ginger, julienned
1 clove of garlic, chopped
300g pink oyster mushrooms
Sauce
2 tbsp oyster sauce
2 tbsp Shaoxing wine
½ tsp sesame oil
1 tsp sugar
Method
Cook the noodles in a large saucepan of boiling water for 2 minutes then drain, refresh under cold running water and toss with a splash of oil to ensure they don’t stick.
Combine the sauce ingredients
Heat a wok over high heat. Add the mushroom and toss to coat in oil. Fry until golden then add ginger and garlic and toss again. Add the noodles then pour in the sauce and toss through to coat everything.

We are absolutely thrilled to be featured on the incredible new vegetarian menu at Moss on Wood
Their menu contains all sorts of tantalising treats and you can find our mushrooms in this delicious Mushroom Gnocchi (pillowy melt in your mouth goodness with creamy sauce, highlighted with pickled shiitake and roasted hazelnut) and on the Funghi Pizza (kiln fired mushroom ragu pizza on a garlic cream base with thyme and blue cheese). Both of these dishes are certified delicious 🤤🍄❤️
Executive Chef Mark Collings goes out of his way to source local produce and support small businesses like ours. Mark was the first Chef to contact us in the very early stages of our little mushroom operation and has been with us every step of the way. Shiitake!!!! After a long wait they are finally back in season! Definitely our most requested species, full of delicious umami goodness and rich in immune boosting polysaccharides. It’s one of the world’s most studied mushrooms and has been cultivated by the Japanese for centuries, where it is commonly referred to as the Elixir of Life.
