🥬 Japanese Cabbage Pancakes (Okonomiyaki)
A delicious gluten-free meal made from simple ingredients. Crispy on the outside, soft in the middle, and surprisingly popular with the kids — our little taste tester certainly approved! 😄
Ingredients
• ½ cabbage
• 4 eggs
• 2 cups gluten free plain flour (or regular plain flour)
• 2 tsp bicarb soda
• 2½ cups water
• 4 tsp GF tamari sauce (or soy sauce)
• 2 tbsp onion powder
• 2 tsp Massel vegetable stock powder (optional)
Method
Roughly chop the cabbage, removing the core. Add to a food processor with the remaining ingredients and blend until mostly smooth (a few small lumps are fine).
If you don't have a food processor, finely chop the cabbage and mix everything together in a bowl.
Cook with a little extra virgin olive oil until bubbles appear on the surface, then flip and cook until golden brown.
Serve with Kewpie mayonnaise and thick teriyaki sauce. They're delicious on their own too — our little one loves them just as they are!
Makes enough for 6 adults.
