The Nationals candidate for Gippsland East, Gemma Rendell, herself a keen hunter and Australian Deer Association member, suggested I try the venison cabana from his Maffra Butchers and I'm glad I did.

Local butcher Nathan from Fehst on Meats regularly sources venison for his range, with the meat processed right here in Gippsland at Eastern Abattoirs and value-added by Rosedale Butchers.
