SOUP WEATHER

We love a good meat-free and easy midweek go-to soup,especially with the price of meat blowing out your weekly shopping budget!

Don't forget to add a good scattering of our small batch DUKKAH to bring this tasty veg soup to the next level 🍛

RECIPE

Bake chopped veg on about 180/200 till nicely charred...

• 1 fennel bulb
• 2 red capsicum
• 2 red onions
• 8 red tomatoes
• 10 whole garlic bulbs
• drizzle with olive oil
• season well with rock salt

Blitz roasted veg till smooth with...

• add 400g tin of crushed tomatoes

Pour into large pot on low heat and add...

• chicken stock to desired consistency
• sprinkle dried basil + smoked paprika
• taste and season with pepper + salt

Serve...

• top soup with a dollop of natural yoghurt
• drizzle some olive oil
• scattering of our DUKKAH
• finish with fresh basil

Note...
If you desire a creamier version, add a good pour of cream just before serving.

PIZZA + WINE

Yesterday we experienced a taste of Autumn in the Southern Forests with the lovely Deitos family who hosted another successful 'Wine + Pizza + Truffle Palooza' event on the families local vineyard on the outskirts of town.

We arrived mid afternoon to a generous tasting of pouring us a fresh and crisp 2024 chardy to kick start our visit, happy wife.

Love a good farm shed gathering filled with good folk enjoying great wines, delicious woodfire pizza with plenty of fresh shavings of truffle to elevate the experience.

Great to see so many local families and friends I haven't seen in a while soaking up the afternoon, embracing some genuine country hospitality.

Seriously, Autumn in the Southern Forests region is very special and making those moments even more memorable is venturing to some of our local wineries.

Fabios and Katrina's 'DeiTos Vineyard' is definitely one of those family owned and run wineries you'll want to put on your 'must-do' list when your next visiting.

I'm definitely marking this local event on my calendar for next year!

CALL YOUR MUM ♡

For those of us still blessed to have our Mum's...call her ♡

I've lost count how many calls I've made to my Mum asking how she made that sticky, sweet chicken dish or what spice did you use in that delisiously good cake with the cream cheese icing.

Mum has a catalogue of generational recipes either written down or in her head. She's a master at "eye-balling" measurements or adding a "dash" of this and a "pinch" of that without measuring exact amounts of ingredients...an intuitive cook.

I adore those food dial-up calls.

Mum's in her mid 80's and the importance of still sharing her "secrets" and talking food gifts us a continued meaningful bond. I guess you could say they're our cultural roots and ensuring her legacy lives on through her food is a soulful and nourishing heirloom ♡
