🏃‍♀️Trying to simplify school lunch making for 3 kids so when the boss (miss 15yo) wants salads they are all getting salads 🥗.

Today’s is PeaNOT Rice cucumber bowl 🤸‍♀️

Here’s what I included 👇
✅Rice (precooked last night)
✅Chickpeas coated in PeaNOT satay style sauce (recipe coming soon)
✅Spinach
✅Cucumber
✅Celery
✅Vinegar based dressing over the greens balances the creamy PeaNOT sauce

Both dressings and rice pre prepared and in the individual containers so these were very easy to assemble quickly in the morning.

Lets see how today goes 🤞
