Most people know coffee as a roasted bean or a cup — but before all of that comes the green bean. It’s what’s left after the coffee cherry is harvested and processed, and it’s the foundation of every great roast.

Once the cherries are harvested at peak ripeness, our farm in Mareeba processes them using three distinct methods: washed, natural, and honey. By mastering all three, we’re able to offer a genuine range of flavour experiences — all from the same land.

Our coffee grows in Australian soil, gets processed on the same land, and is roasted right here. That’s what traceability really means to us.

Meet Ted, our Plant Manager here at Jack Murat.

A Mareeba local with over ten years experience working across coffee farms in the region. Jack managed to poach him four years ago and he’s “actually quite enjoyed” working here ever since.

Ted looks after the health of our plants year round, making him one of the very first steps in our farm-to-cup process.

Recently converted to black coffee, and a very good person to have around the farm.

How to brew filter coffee with Pierre at Jack’s North Bondi.

Using our Lactic Fermentation and a 20:14 ratio, this is Pierre’s approach to a balanced, easy-drinking cup at home.

Pour slowly, give the water time to rest between pours, and let the brew settle for around two minutes.
