This is a small release, but an important one. It closes out the 2025 harvest while giving a glimpse into the processing work now building momentum in 2026.

This release brings together four small trial batches from last harvest, each shaped by a different fermentation approach. These were small scale experiments from the farm, and some of these processes are now being scaled and refined as our 2026 harvest gets underway.

Rather than one fixed batch, Wildcard is a collection of limited experimental lots. Each bag will be packed at random and will feature one of four processes: Mosto, Bioreactor, Hops or Kombucha.

Each coffee is different, but they share the same spirit: vibrant, expressive and a little unexpected.

Moka pot is simple, but everyone loves it — it’s one of the easiest, most affordable ways to get into specialty coffee.
Nothing beats brewing with Australian coffee, but doing it right matters just as much as the beans you use.

How to brew:

Fill the bottom chamber with hot water, just below the safety valve.
Add finely-ground coffee to the filter basket — level it out, don’t pack it down.
Screw the top on (careful, it’s hot), and set it on medium-low heat with the lid open so you can watch it work.
Once you hear that gurgling, sputtering sound, pull it off the heat immediately — that’s the signal it’s done, and letting it keep cooking is how you end up with bitter, burnt coffee.

Pour, sip, repeat tomorrow.

Jack’s Blend was created specifically for our café in North Bondi.
When we opened Jack’s, we knew we wanted our own blend that showcases Australian-grown but also meets the specialty coffee standards Sydney is known for — something that felt like us.

We tested the ratios and the recipe until it gave us exactly what we were looking for.
The result is a coffee built for Sydney. Full body, natural sweetness and complexity. Something that works in a flat white, a cappuccino or straight as a long black.

Morning at home, brewing our Filter 01. Here’s exactly how we do it.
What you need:

15g of coffee / 240g of water at 93°C — ratio 1:16
How to brew:

Heat your water to 93°C
Fold your filter and place it in the V60
Rinse the filter and preheat your vessel — discard the water
Add the 15g of coffee
Pour 50g of water for the bloom — wait 30 seconds
Add the remaining 190g of water slowly over 1 minute
Wait for it to drip through — aim for 3 minutes total
Pour and enjoy

Our busiest time of the year is almost here.

Harvest season is when everything we’ve worked for comes together. The trees, the weather, the soil. Months of work all leading to this.

Every hand on deck, every part of the farm running at full capacity. It’s intense, it’s exhausting and honestly, it’s our favourite time of the year.
