Every ingredient matters to us.
Sourcing ingredients is what I do and its what I'm good at. If there is something I've consistently found is that when you chase quality you find people on the othee end that are just as passionate.
I don't think it's subjective, but it can be harder to know what to look for when it's an ingredient you're not familiar with. Or even an ingredients that is only available as lower quality in your country.
Cardamon is a great example. What is in our grocery or in your pantry is often lower grades. They are old, dull, have lots of defects and are varying sizes (so varying stages or ripeness, including over and under ripe. It affects flavour in exactly how you would imagine, its less flavoursome, has less aroma, more inconsistent and some unpleasant off / defective flavours. Think of an under or overripe fruit and you can quickly imagine.
This batch of Cardamon has come directly to us from India.

These are crushed and blended into our feel good chai, how lucky are we!
