Spent the day out on the water with Craig and honestly came away with a whole new level of respect for what our fishermen do every day.

We’ve worked with fishermen for years. We speak to them on the phone, buy their catch, hear the stories and weather reports, but getting out there and seeing it firsthand is completely different.

This was only a small glimpse into their world, but it gave me a deeper understanding of the time, effort, skill and uncertainty that goes into every fish that lands on a chef’s plate.

As Astakos continues to grow, one thing I’m passionate about is getting closer to the source. Not just buying seafood, but understanding it. Learning it. Living it.

Over the next few years I want to spend more time on boats, at farms, with producers and fishermen across Australia. Then bring those stories back to our team and our chefs.

Because behind every fish, oyster, prawn and lobster is a person, a family and a story worth telling.

Wholesale isn’t just about supplying product. It’s about connecting chefs to where that product comes from and helping them appreciate the incredible work that happens long before it reaches the kitchen.

This is just the beginning. Plenty more boat days, farm visits and producer tours to come.
