Here’s the second half of our release, showcasing the full expression of our Southern Hemisphere hops minus the haze.

We first met Mat from Track Brewing Co back in April and hit it off over a few beers. He got in touch about a series of Aussie collabs showcasing some of Ryefield Hops and obviously we were keen. The result is Bemboka, a crisp and refreshing West Coast Pils hopped with Azure. Originally centennial, Azure has become its own variety, still throwing back to its heritage with floral and citrus character but with an undertone of resin and woody tones.

To follow, we complete our release with Double Tap, a big West Coast IPA that is all about Rakau & Nelson from our friends Garston Hops.

On the nose you’ll be welcomed by notes of pineapple & gummy bears, followed by a refreshing stonefruit & citrus body ending with a smooth and balanced dry finish.

This month’s release is all about Southern Hemisphere hops. We love them, you love them and they never disappoint, delivering big tropical aromatics, distinctive character and lots of personality.

Up first is Main Character Energy, and you guessed it, the hint is in the name for this massive DIPA. We’ve absolutely loaded it up with Riwaka in both T90 and CRYO form then balanced it out with Rakau and a sprinkling of Citra.

Right up front is aromas of sweet candied peach, juicy mango and bright passionfruit all bound together by a complex citrus character. Silky smooth and perfectly balanced, if we don’t say so ourselves.

Our newest DDH IPA, Wildcard, is an absolute tropical fruit bomb layering in guava, red berry, lime and ripe papaya thanks to the combination of Vic Secret, Cashmere and Krush.

Until our fresh hop DIPA earlier this year we’d only used Vic Secret sparingly but as you might have noticed, we’re really digging the current Vic Secret crop. It's got this crazy combination of tropical fruit and resin that we can’t get enough of.

We’ve lent into a couple of cracking single hops for our latest draught only hazies.

Comet is our newest DDH Pale bursting with notes of gummy lollies, peach and citrus with just a hint of dank resin that leaves you reaching for the next sip. Comet isn't a hop we’ve used before but it has definitely exceeded our expectations.

If you’re a Riwaka fan, drop by to get your dose of Generational Trauma, heavy on juice, deep on complexity and loaded with Riwaka hops! The nose hits hard with melon, stonefruit and caramelised pineapple. On the palate, a wave of bright tropical fruit and zesty lime will welcome you in a comforting, refreshing hug.

From tomorrow and through to Sunday, join us for the Dark Side Of The Beer Festival ❄️

We’ll be celebrating winter along with our fellow breweries of the Inner West Ale Trail

Besides pouring dark beers, we’ll also be giving a crack to the German tradition of Bierstacheln or ‘beer poking’, caramelising the residual sugars in your beer with a hot poker & giving it a toasted marshmallow like foam and smooth creamy mouthfeel. Feel the heat for yourself on Thursday from 7:30 to 9:30pm & Sunday from 12 till 2pm.

Shanty club singers will also be coming along tomorrow at 7.15pm to bring some whimsy, see you then 🍻

It feels quite rewarding ending the week having ticked a few boxes as well as having things to look forward to. We’ve packed & shipped off to Melbourne a few beers together with our Head Brewer Mike who will be attending the Australian NZIPA Challenge taking place at Rocky Ridge Brunswick this weekend.

Southern Hemisphere hops punch well above their weight - big tropical aromatics, distinctive character, and a personality you won't find anywhere else in the world. They're also the backbone of some of our favourite beers to brew.

Join our Head Brewer Mike for a hands-on evening exploring what makes these hops so special, from cult New Zealand varieties through to standout Aussie locals. You'll get up close with the hops themselves, learning to pick apart their aromas and understand why hop selection has such an outsized effect on the beer in your glass.

At the heart of the evening is a curated tasting of four beers, each brewed with hops you'll actually get your hands on. Mike will talk through where the inspiration for each brew came from, how the hops were chosen, and what they bring to the finished beer - the whole journey from cone to can.

Come ready for a proper sensory experience, nose to tastebuds. Expect to have green hands by the end of the evening, if you know you know.

Hops are a huge part of what we do here at Bracket and it’s hard not to get excited when it comes time to select the specific lots of hops we’ll use for the next year. This year we were lucky enough to reach selection volumes for a number of NZ varieties we absolutely love to brew with. So expect to see some cracking NZ hopped beers over the next few months.

On a different note, if you’re a keen homebrewer we host a meeting of local (and not so local) homebrewers on the 2nd Thursday of each month. At our last meeting we held a hop sensory session using the hop selection samples we had left over. As commercial brewers we take a lot for granted, which includes being able to look at multiple lots of the same hop variety, so being able to share that with a group of like-minded people was great.

JULY RELEASE

And here we are with the last two beers for this month’s release 🍻

Expect the unexpected with our latest Hazy DIPA, Full Spectrum. After brewing Side Quest, our fresh hop DIPA back in April, we were keen to brew with Vic Secret hops again, minus the 8hr drive.

So we got our hands on the, just released, 2026 Vic Secret crop paired it up with some punch Krush and away we went. The result, a DIPA that drinks with a soft pillowy mouthfeel & carries massive hits of orange, peach, and lush tropical fruit notes.

The sweetness is perfectly countered by a sophisticated, pithy grapefruit bitterness and a hint of pine. It finishes with a refreshing, complex lift of lemon zest and lemongrass, ensuring every sip is as bold as the first.

Wait, did someone say more dark beer? Well, you’re in luck.

We’ve dialled up the comfort with our latest porter Lucky Dart. We took a classic porter malt bill, added a generous helping of oats. It’s hearty, complex, and incredibly smooth from the first sip to the comforting finish.

Whether you’re hiding from the winter chill or just love a proper dark beer, this one’s for you.
