Two tall legends back behind the bar — Daniele Piccinin (Lessinia Hills, Veneto) and Ashley Huntington (Two Metre Tall, Tasmania).�They first met in Japan, bonded over being very tall and very good at what they do — and now they’re reuniting at Boire for an evening of wild ferments, bubbles, and good energy.
Expect Daniele’s new vintages, Ashley’s ales & ciders, and a proper aperitivo spread from the Boire crew to keep you standing.

This November, we’re heading south to join our friends at Brico for a special dinner with winemaker Daniele Piccinin — all the way from San Giovanni Ilarione, a small village in the Lessinia foothills northeast of Verona.

Daniele farms Durella, Chardonnay and Pinot Nero on chalky, wind-swept slopes surrounded by woodlands and meadows — a true ecosystem that shapes the character of his wines. His project, Muni, has helped re-establish Durella as one of Italy’s great native grapes, producing wines of purity, structure and life.

Brico’s chef Simon Ball-Smith and the team have created a Venetian-inspired menu to match Daniele’s captivating wines — a one-night celebration of Veneto’s food and energy.

From Italy to Australia, from vineyards to wedding celebrations, quick lunches and late night drinks, even my cheeky cat who loves the wine — it’s been a joy to know and work with Daniele over almost a decade. His wines are full of heart, just like him.
As an importer, it’s always special to share his work — it feels like bringing a bit of home to the table.
Super humbled to have Daniele with us at Paski for a wine dinner on November 18th. Don’t miss it. 🇮🇹🍷❤️

WE ARE BACK!
SALON DES VINS - A BOTTLE TOPS POP UP

Whilst a slightly different format, Salon Des Vins will host a tasting component, with a room full of friends joining us for the day. A curated list of wine, beer, amaro and spirits will be available to sample for the afternoon, and the bar will be open all day with rarities available by the glass.

The tasting will morph into a wine party in conjunction with our good friends at Hope Street Radio, and snacks will be available for the duration of the event.

As a smaller event, tickets are extremely limited for this one.

On 17 & 18 May at The Galleria, Ettalong Beach, each 3-hr session gives you access 120+ drink tastings from 30+ rebel producers, the Plumm Masterclass wine series, and a alks series diving into everything from sustainability to regenerative farming.The food program is massive too - so there’s great eats to match your drinks! This is huge for our region - and we’re stoked to see our community showcased like this.
