This month's whisky sat in Australian apera hogsheads from McWilliams. Casks like these barely turn over. Some spend decades sitting in a solera system before anyone lets them go.
Backwoods went with a light-to-medium toast instead of a heavy char, so the oak doesn't bury the apera character. Leigh re-coopered every single cask himself.
Australian grain. Australian smoke. Australian apera casks. Matured down in Yackandandah. About as local as whisky gets.
