This rather lovely South Indian inspired dish looks a lot like a sweet and sour dish but it is in fact more savoury as there is no added sugar, and it has quite a punchy flavour. Velveting the chicken in egg and cornstarch means it will stay tender through the short cooking process. Capsicum and spring onions add freshness and crunch to the otherwise intense flavours from the Outback Spirit Chutney, Sweet Kakadu Plum Sauce and garlic and if you crave more sweetness, you could happily add cubes of fresh pineapple to the dish - go on, we won't tell anyone!

We love anything that has any one of these three ingredients but when all three make an appearance count us triple in! Plus, this is a dessert made for the Mediterranean diet which just proves that really delicious desserts CAN be had while making sure one eats healthily.
Here is the link to the recipe and you will need milled ANISEED MYRTLE (Anisata) - as the name suggests this is a distinctive aniseed herb with a delightfully aromatic finish. The flavour is similar to that found in star anise and fennel, but other compounds found in its leaves add a sweetness, making it suitable for both savoury and sweet dishes. Anise Myrtle is intensely flavoured and small amounts deliver a big flavour hit so be judicious when using it. Where possible, it’s a good idea to add it towards the end of cooking to avoid dissipation of the important essential oils. It is lovely sprinkled on cooked vegetables and makes a great rub for all meats and seafood, before grilling or roasting. Add to yoghurt or crème fraiche for an interesting flavour. Add to pasta sauce or to a tempura batter for fish.

Baby Beef Pasties with Mango Native Mint Relish - Keeping the Tasttes of Summer Alive!
Easy and very tasty recipe to make on the weekend to provide lunches throughout the week ( these freeze really well too) - or to have on hand for when friends come to yours.

Makes about 35 baby pasties

1 small brown onion, finely diced
250g lean beef mince
2 teaspoons plain flour
¼ cup of beef or vegetable stock
½ cup mixed vegetables (diced carrot, peas, bean etc)
1 teaspoon garum masala
2 teaspoons crushed garlic
2 tablespoons chopped coriander
Outback Spirit Tasmanian Pepper Salt
7 sheets prepared puff pastry
1 egg
1 tablespoon milk
Outback Spirit Lemon Myrtle Coconut Chilli Nut Free Dukkah
Outback Spirit Mango Native Mint Chutney

Preheat the oven to 180C
Heat 1 dessertspoon of the oil in a large frying pan and cook onion until tender.
Add the beef mince and stir fry until cooked through.

Sprinkle the flour over the mince and cook stirring for one minute. Then add the stock and allow the mix to come to the boil, reduce to a good simmer and allow to thicken.

Add the Tasmanian Pepper Salt and stir through. Allow to cool to room temperature.

Use an 8cm cutter and cut 5 rounds from each pastry sheet. Place a heaped teaspoon of mixture in the centre of each round.

Make an egg wash by beating together the egg and the milk and use this to moisten the pastry edges. Fold the pastry over to form half-moon shapes. Press the edges together to seal, crimping with a fork or your fingers.

Place on a baking tray lined with nonstick baking paper, brush with egg wash and sprinkle with Outback Spirit Lemon Myrtle Coconut Chilli Dukkah and place in the oven. Cook for approximately 15-20 minutes until golden and the pastry is cooked through.

Wattleseed - Indigenous names include Yarlirti ,Ariepe, Ganabargu, Ngatunpa, and Pulkuru and many more depending on the region and nation. We respect the knowledge that our Aboriginal supply partners have taught us about wattleseed.

Wattleseed is one of the most prolific plants in Australia and grows in almost all environments from the desert ( mulga and elegant wattle) to the sea (coastal wattle) and everywhere in between. Wattles vary in flavour and colour and size depending on the region but all are intensely flavoured and can be used in so many ways. The seeds have to be roasted and ground into a powder for most culinary uses. Aborigines, in the past and to this day, roast and grind wattleseed to make dampers and johnny cakes.

Wattleseed is an extremely versatile ingredient and may be used in savoury recipes such as pasta and bread and as a seasoning for meat. But wattleseed really comes into it's own in baking and desert making - biscuits, cakes, muffins, ice-cream, mousse and custards. It is particularly delicious when paired with dairy and wattleseed and chocolate is a marriage made in heaven!

Wattleseed has a strong flavour and must be used judiciously. It can affect the gluten activity in flour and for this reason it is best to add to breads and things that take some mixing, towards the end of that process.

The taste of wattleseed can be broadly described as nutty with coffee and chickory overtones. As the seeds are high in oil and this varies from variety to variety, the seeds must be carefully roasted to maximise the flavour. We have over 30 years experience in roasting and grinding these wonderful seeds, so yo can be sure of the quality of our product
