🚨 NEW REAL ALE 🚨

100% aussie ingredients | 3.4%

Our seasonal real ale returns — brewed once a year, gone when it's gone. We've made some minor adjustments, dropped the ABV slightly and played with the grist to achieve a slightly different hue. This one really sings on the palate.

Brewed with 100% Australian grown grains from (NSW). Schooner, Biscuit, Chocolate, Voodoo & Oats. Hopped at the start of boil w/ Red Earth from (NSW) to 19 IBU.

This beer was fermented in stainless without temperature control w/ the same english strain used in the 'Golden' from (NSW).

Packaged on May 20th and can/keg conditioned for 3 weeks.
This was the first limited release from the Real Ale range, we're glad to see it back and we're excited for what we have planned for this range over the next 12 months.

Burnt toast, cinnamon & milk chocolate
Light, malty & fresh.

Made for slow afternoons and good company.

Big couple of days filling barrels here in Rezza.

We've been packaging a lot in preparation for our biggest year yet so it always feels great to refill with base beer and ensure we have the microbial diversity to continue blending.

There's nothing like the sound and smell of fermentation, it'll never get old.

‘our daily brett' | blend of barrel fermented saison | conditioned w/ brettanomyces | 5.6 %

Blend | #3

This is a blend that is very close to our hearts and only comes around when we feel the beer within our barrels can represent it.
Blend #3 is our most accomplished to date, and the first since 2022.

A blend of five barrels varying from 6 months to 3 years in age.
These barrels varied considerably in character and I had a lot of fun blending them.

A young saison providing freshness and base structure, mature stock contributing the funk, a Belgian blonde adding colour and body, and a two-year-old barrel showing early acetic development, blended at 10% for acid structure and complexity.

Packaged on November 10th 2025 and bottle conditioned for 6 months.

Bright apricot & lemon squash on the nose with an oxidative depth that only emerges with age.
On the palate it's soft, complex, and textural.
Peach & candied orange carry through on a well rounded acid structure.

This beer will cellar extremely well. While it's drinking beautifully now, we recommend setting some aside.

This is as close to the old world as we get in Reservoir.
