A modern take on the classic, French choux

What an adventure!!
The Choux has been an amazing journey, which today has come to an end.
-
I can't thank you enough for all your support these past months, it was what made it all real.
I've been overwhelmed by your messages and that shows these little puffs did make an impact after all, which I think is what made this whole experience so special.
-
As for me? I'm moving on to my big love, the cheese. I want to practise, make (and maybe sell?) my cheese and for that to happen I need more time to focus. This is why I'm stopping The Choux.

Once again, thank you for everything, keep doing what makes you happy and maybe we'll meet again.

Thank you to everyone who came to the market today!
On that note, I would like to say that next Saturday it will be the last market for The Choux.
It has been a crazy (to say the least) ride for me since Covid started back in 2020, with some family losses and personal struggles.
But The Choux was what kept me focused and motivated and for this, I'll be forever grateful. During a time of isolation, I felt a sense of community and support I never thought it was there.
I've met so many passionate artists/makers/chefs who like myself, do everything on their own and take such a pride doing it. You should all be so proud of yourselves.
And to each and everyone of you who bought a choux, send boxes to friends who had a hard time during lockdowns, a big thank you from the bottom of my heart. You made it all real!
I couldn't be prouder of where The Choux has come, but now its time for me to focus on other things.
So if you want to try some choux, then come down to next Saturday.
In the meantime, have fun in everything you do.

People often ask me which one I would suggest for them to eat. I can't really say which one is my favourite to avoid any dramas of course 😂.
-
But when it comes to lemon I always say: " if you like an old fashioned lemon tart, then you will love the lemon choux!". And it works!
-
Tangy and rich lemon curd, créme fraîche for the "gourmandise" as the French say, and a fluffy, puffy choux instead of your crust. What's not to like? 🤷🏽‍♀️

Gianduja, a hazelnut and chocolate confiserrie!

I make my own using a 100% hazelnut paste and of course chocolate which is then tranformed into a rich custard!

It' officially a New Year! Although I'm not the person to sit down and reflect on the past, I look back of what 2020 and 2021 were and I'm proud.

Proud of overcoming everything that was thrown at me but also for bringing to life this little business of mine.

Which is a strong reminder that sometimes the journey is more important than the destination.

I truly dont know what's in store for this new year but it better be a good one!
