Why does our chicken soup turn to jelly in the fridge? šŸ¤”

Because we make our broth from scratch.

We slowly simmer chicken and vegetables for hours, extracting flavour and nourishment into the broth. During the cooking process, collagen breaks down into naturally occurring gelatin, which is what gives the broth its rich texture. As it cools, that gelatin sets, creating the wobbly texture you see here.

For tired new parents, it’s the kind of nourishing meal that’s easy to heat, easy to eat and packed with nutrients.

Once reheated, it melts back into the silky soup our customers love.

This week we’re bringing back our Greatest Hits Box, featuring three of our most-loved meals: Lasagna, Chinese Chicken & Sweet Corn Soup, and our bestselling Butter Chicken.

We recently saw a ready-made meal company selling single serves of lasagna that weighed 250g. Maybe that’s enough for some people, but we don’t believe in hangry families over here.

Our lasagna slices weigh in at a generous 450g each, because we know many of our customers are breastfeeding mums, hungry parents, growing kids, and families who need a proper meal, not a snack pretending to be dinner.

As always, everything is cooked from scratch using real ingredients, packed with flavour, and delivered ready to heat and eat on those nights when life is busy and everyone is asking what’s for dinner.

This week we launched our very first New Bub Club pop-up at From Day One.

Honestly, this is something I’ve dreamt about since starting the business. Meeting mums where they’re actually at, and making nourishing food easier to access during those early postpartum months.

At New Bub Club, we make fresh, ready-made meals for new and busy families - slow-cooked, heat-and-eat dinners designed for the nights when cooking just isn’t happening.

It was such a natural fit to partner with From Day One - a space built for mums to feel seen, supported and connected.

Next week’s menu is a goodie.

Butter Chicken - no actual butter here. We use ghee (the good fats), and it’s loaded with chicken, peas and spinach. Creamy, mild, and packed with nutrients.

Chinese Chicken & Corn Soup - a hug in a bowl. We start with a from-scratch broth, add delicate egg ribbons, pureed corn, and balance it with that perfect umami hit.

Lasagna Bolognese - slow-cooked for 4 hours, layered with bƩchamel. Proper comfort food. Always a favourite.

Hi, I’m Darby and I run New Bub Club.

We make fresh, ready made meals for new and busy families.

8 years ago, I was working as a refugee lawyer. And at the heart of it, my work has always been about caring for people.

These days, that looks like feeding families.

But this week, it means something more.

We’re supporting the Asylum Seeker Resource Centre and Feast for Freedom, a campaign celebrating the stories, recipes and cultures of people seeking asylum in Australia.

The meals we’re cooking are recipes gifted by refugees (menu in comments).

You can order our special edition Feast for Freedom Meal Box for delivery across Victoria this Saturday, or Tuesday or Wednesday next week, with profits going directly to support the ASRC’s work.

Or, you can sign up to host your own Feast for Freedom dinner before April 30.

10K of you… what 🄹

I started this account to share a little bit of life, food, motherhood and the chaos in between, and somehow we’re here. 10K of you.. so here are 10 random facts about me:
1. I grew up in Ohio šŸ‡ŗšŸ‡ø. Lived in New York and California, met my now husband in Greece, then moved to London, and now Melbourne. A whirlwind of continents.
2. I buy no more than ~ 5 items of clothing a year for myself. No skincare routine beyond a good splash of water and sunscreen 🤣 Chronic under-consumer in an over-consumption world. I’ll always choose travel and good food instead.
3. I spent 7 years at uni to become a lawyer, and I used to represent child refugees. Sometimes I miss it. Most of the time I don’t.
4. I have 3 siblings, an older sister and younger twin brothers, and they are my ride or die squad.
5. I’ve lived in Melbourne for nearly 5 years and I’m applying for my citizenship this year šŸ‡¦šŸ‡ŗ
6. I’m half Chinese, half Irish. My husband is Greek.
We eat New Bub Club 3x a week, Greek 2x, and Chinese or Asian the rest. I rarely cook meat at home - NBC covers that, and we keep the rest mostly veg and fish.
7. My mum was a professional ballerina and my dad was a college wrestler, so I grew up doing both sport and ballet. Now I run, lift, and love a good HIIT class.
8. It took me about 3 years to really feel settled in Melbourne. Raising kids away from my family has been hard. Building a village at this stage of life isn’t easy and has taken real intentional effort.
9. We’re in the process of establishing a truffle farm šŸ‘€If you’re also low key obsessed, DM me so we can fully nerd out about fungi.
10. Our two boys are 6 and 3.5, quirky, cool, and currently deep into PokƩmon and crafting 24/7.
They could happily live off yoghurt, ā€œhard pearā€ and soup with the broth drained out šŸ™ƒ Soft pear and wet soup are not welcome.

A year ago I signed the agreement for our first kitchen.

But the truth is - I almost didn’t.

Losing my dad in the months before before completely knocked the wind out of me. I didn’t know how I was meant to keep building a business while carrying that kind of grief.

All I wanted was to hide for a while. To not be the one holding everything together.

But somehow, I came back to my why.

Food. Family. And the grit my dad taught me.

So instead of walking away, I took the leap.

This kitchen has been one of the hardest and best things I’ve ever done - and somehow it’s nearly been a year ā¤ļø
