ALL’ACQUA PAZZA with cherry tomatoes, white wine sauce and olives.

In Italian cooking, “all’Acqua Pazza” is a specific preparation, not a poetic phrase.
It refers to seafood—traditionally fish—gently poached in a light, fast broth of water, olive oil, garlic, cherry tomatoes, and sometimes white wine.
No heavy sauce. No butter. No theatrics.

It comes from Southern Italy (Campania) and was historically a fisherman’s dish—made on boats with seawater, tomatoes, and whatever aromatics were on hand. Simple, briny, honest.

This little lab in West Melbourne did more than serve lasagna.
It was a test kitchen. A proving ground. A place where Lasagna Lab found its feet.
Endings don’t erase what came before.

From 24 December, this pop-up lab closes its doors permanently.
Thank you to everyone who walked in, came back and believed in what we did.
