Big announcement from us! 18 months ago we started writing a book, and we’re really excited to share that This Is Not Alcohol will be out soon.

We’ve made a collection of 40 recipes. They’re drinks to make at home, organised into three parts: Built on tea, fermented and mixed drinks.

Thanks to Hardie Grant Books and the creative team who brought this to life with us. We’re looking forward to sharing a lot more about it all, but for now stay tuned.

Table tea is so simple and stripped back that it was almost more complicated to get just right. Mao Feng, a spring harvest green tea from Yunnan, is perfect for the part. The spring harvest green tea is a little vegetal, very fresh and vital. Working in with the sweetness of jammy apricot, it provides just the right amount of tannin and structure.
