As promised, here’s the high protein shepherd’s pie (or cottage pie if we’re being technical and don’t want that one bloke in the comments correcting us 😅).
Makes 4 serves.

Ingredients:
• 250g extra lean beef mince
• 250g extra lean pork mince
• 250g mixed peas, corn & carrots
• 180g brown onion, diced
• 15ml oil
• 20g garlic, minced
• 50g tomato paste
• 200ml salt reduced chicken stock
• 20ml Worcestershire sauce
• 12g brown monk fruit sweetener
• 8g plain flour
• 1350g potatoes
• 1 tsp thyme
• 1 tsp paprika
• ½ tsp turmeric
• Salt & pepper to taste
Method:
1. Boil potatoes until soft, then mash.
2. Cook onion until softened.
3. Add garlic and cook for 30 seconds.
4. Add beef and pork mince and cook until browned.
5. Add thyme, paprika and turmeric.
6. Stir through tomato paste, Worcestershire sauce and monk fruit sweetener.
7. Sprinkle over flour and mix well.
8. Gradually add stock and simmer until thickened.
9. Stir through mixed vegetables.
10. Transfer to a baking dish and top with mashed potato.
11. Rough up the surface with a fork and bake at 200°C until golden.
