This week we’re fortunate to have Chef Hamish share his Grandfather Chris Doutre’s recipes with us. Hamish was lucky enough to spend 6 years living with his Grandfather and in this time learnt the secrets to his infamous recipes.
Chris was born in India and moved to Australia in 1980, bringing his impressive knowledge, talent and long association with North Indian cuisine. He soon established a popular restaurant in Brisbane called Scherhazade, bringing some of the first tandoor ovens to Australia for commercial use. He then later founded the popular ‘Passage to India’ simmer sauces which are still sold around the country today.
