Homemade Flour Tortillas. 3 ingredients only.

Ingredients

400g plain flour

200g lukewarm water

- 1 tsp salt

Method

Combine flour, water and salt and mix until it forms into a ball.

- Knead dough for a couple of minutes just so that everything is well combined.

- Rest in a bowl for 20 minutes on your bench top

- Divide dough into 8 equal balls

- Roll each ball out

- Place onto a hot non stick pan. No oil needed. Cook for a couple of minutes or until you start to see it puff up and get colour.

This Kreas Kokkinisto was one of my Pappou's favourites. Slow Cooked Beef braised in a rich tomato sauce, served over spaghetti with plenty of bread nearby to soak up every last bit.

Slow Cooked Beef Casserole.

Ingredients

- 800 g chuck steak or gravy steak
- 1 onion diced
- 1 tsp garlic
- 1 can crushed tomatoes
- 1 can tomato purée
- 1 beef stock cube + water as per packet instructions
- 1 tbsp dried oregano
- Salt and pepper to taste
- 4 large potatoes quartered
- 3 carrots chopped into chunks
- 1 tbsp olive oil
- Optional 1 tbsp cornflour + 1 tbsp cold water (to thicken, if needed)

Instructions

- Season the beef with salt and pepper.
- In a large pot or Dutch oven, heat 1 tbsp olive oil and brown the beef on all sides. Remove and set aside.
- In the same pot, add diced onion and garlic. Cook until soft and translucent.
- Add crushed tomatoes, tomato purée, oregano, and stir.
- Return the beef to the pot. - - Add beef stock and water until the beef is just slightly covered.
- Cover and simmer on low heat for 3 hours.
- After 3 hours, add potatoes and carrots. Cover and cook for another 50 minutes.
- In the last 20 minutes, uncover to allow the sauce to reduce.
- If the sauce is still too thin, mix 1 tbsp cornflour with 1 tbsp cold water and stir it into the stew to thicken.
- Serve hot with crusty bread or your favourite sides.

Apparently Christmas Crack is all the rage at the moment.

Traditionally, it’s made with Salada biscuits, a buttery toffee layer, and melted chocolate on top.

I couldn’t help myself and decided to Greek-ify it. 😁

This version takes inspiration from kourabiedes; that rich, buttery, almond shortbread we all know and love at Christmas and turns it into a slice-and-share “Christmas crack” style treat. Same idea, familiar flavours, just with a Greek touch 🤍
