It starts with the broth.

Bones are simmered for hours, then star anise, ginger and shallots are added to bring out their gentle aroma. The broth is rich and flavourful, with a natural sweetness that lingers pleasantly on the palate.

Pour it over soft rice noodles, add slices of beef cooked just right, and you have a bowl of phở that feels complete from the first spoonful to the last.

Each piece begins with clay, shaped by hand and carefully fired in the kiln. It takes patience, skill and countless hours to create something that feels just right. Even the smallest change in temperature can affect the final piece.

That’s why every bowl and plate at Phở Lệ is handcrafted in Vietnam, then carefully brought, one by one, all the way to Melbourne.
