Scenes from the shop lately:

HOJICHA & HONEY: Lots of you are asking at the counter, what’s Hojicha?

Hojicha is a roasted Japanese green tea. It’s earthy, warm, a little smoky, and nowhere near as sharp as regular green tea which is what makes it a pleasure to work with in pastry.

The challenge with Hojicha is that it’s subtle. Too much and it overwhelms everything around it, too little and it disappears completely. Getting it to hold its own next to leatherwood honey (which has its own strong personality) took a few attempts.

Gareth: “The goal when we started working on this tart was to take the classic matcha and honey combo you see absolutely everywhere and make a slightly more interesting, grown-up version of it. It took two or three rounds of testing the ratios before it landed where we wanted it; balanced, the right depth of flavour, and something pretty unique.”

The finished tart is creamy, roasted and slightly savoury, with the leatherwood honey rounding everything out without making it overly sweet.

The Hojicha & Honey is available in store at Richmond and Collingwood, and on pre-order for pick up and delivery via the link below.

Honestly, it’s one of our favourites we’ve made in a while. 💛

SQUEALING! Ok ok ok our Friends From Above tees and jumpers have been out for a long time now, and last week I saw TWO people wearing them out in public. TWO! The first time ever!!! Lots of times I feel exhausted by the it-never-ends-ness of this business, but small things like seeing your merch and take away boxes out in public do always put a smile to our faces. Apologies to the one guy at the pub who saw me pointing at him and appeared to have no idea what was going on.

Got me excited to do some more merch soon… who’s with me?
