A hard sheep’s milk cheese crafted from the milk of Lacaune sheep, the cheese opens with grassy aromas and notes of dried hay, balanced by a delicate buttermilk creaminess. As it fully matures, it develops rich flavours of brown butter, toasted nuts, and warm spices, supported by a smooth, dense paste studded with crunchy tyrosine crystals.

- Appleby’s Cheshire is a semi hard raw milk cheese with a crumbly open texture. Its flavour is often described as mineral, with fresh and zesty overtones. Hawkstone Abbey Farm is located on the Cheshire Basin where for thousands of years shallow seawater repeatedly evaporated leaving layers of salt on the land. The cows graze on the salty pasture and the mineral flavours permeate their milk.

Lightly coloured with annatto, the pressed cheese is cloth-wrapped and matured in the natural cool barn on the farm.

This mild cheese pairs wonderfully with dried fruits, chutneys and pickles.

Since 1855, the - Cravero family has been maturing Parmigiano Reggiano in the town of Bra, Italy.
Their cheese comes from a single mountain dairy near Modena, where high altitude, clean air, and lush pasture produce rich, expressive milk. By working closely with a farmer-owned cooperative, they maintain trust, transparency, and consistency at every stage.
Giorgio Cravero, 5th generation affineur, carefully selects and matures each wheel, allowing it to develop naturally in cool, humid stone caves. Nothing is rushed, and nothing is forced.
The result is a Parmigiano Reggiano with a succulent, moist texture, nutty depth, and layered notes of fruit and caramel.

Millefoglie is a distinctive Italian cheese style crafted by - Latteria Perenzin in Veneto. Inspired by Montasio, it develops a network of fine cracks during maturation, a natural feature that becomes the foundation for its refined finishing process. Matured in underground cellars at the foot of the Prosecco hills, these semi-hard cheeses are shaped by time, place and carefully selected ingredients.

Millefoglie al Marzemino is matured for six months before being infused with a local passito red wine from the nearby Colli di Conegliano. The wine permeates the paste, creating deep ruby veining and a balance of savoury character with subtle sweetness.
