Top me up! ASSEMBLAGE is a BLEND OF BARRELS OF FARMHOUSE ALES AGED FROM 12-60 MONTHS 😲 (now that’s patience!)

Perfect for Spring picnics in a sharing size of 750m Assemblage is a wild ale demonstrating finesse, complexity.

Drawing on our beginnings in the world of w**emaking, this wild ale came together as a blend of unique wild and farmhouse ales - the youngest 12 months, and the oldest an amazing 5 years of age.

Blending them together allowed for a showcase of the complexity and breadth of our aging collection and stewardship.

The end outcome is a unique result, greater than the sum of its parts. 👌

On opening this little funky number, you’re greeted with a strong peach and stone fruit character that delves deep into our unique barrel character. In classic La Sirène style, it finishes dry, refreshing and with an abundance of sourness and character.

OG Saison - our first born and still a standout 🌟 🍻

Our award-winning La Sirène Classic Saison is where it all began in 2010, pioneering our distinctly Australian take on the expressive, rustic Saison style.

Having come from the w**e world we were always enamoured with richer, more artisan styles of b**r, typically of European origin specifically where southern Belgium meets northern France.

“Saison” translates to Season in French and these ales were designed to hydrate and refresh field workers in earlier times in the grain growing regions of southern Belgium 🇧🇪 using ingredients that grew in & around the farms where they were made. It was this rustic, more provincial approach to making ale that drew us to this highly expressive style—and ultimately sparked a lifelong obsession.

16 Years On : We are still creating and understanding this chameleon of an ale, and we say chameleon as the style, in our experience, can be highly influenced by levers that include temperature, pressure, yeast volume and most of all seasonality. This last one is the one that excites us the most as we find the seasons can play a flavour determining role. For instance if you have tried our saisons made in the heat of summer you’ll notice a more lactic edge as more natural airborne lactic acid bacteria ( similar to strains used to make yoghurt) enter the fermentation and help sour it up naturally, again totally dictated by the seasons. Conversely when brewing our saisons in the cooler winter months ( especially in the flux cool climate of Melbourne) our saisons tend to have a more restrained lactic edge and tend to be more yeast forward as the style is famous for.

We have been making Saisons for 16 years now, and our fascination with this rustic, expressive and little-known style continues to inspire us.

Welcome to our Table. 🍺

TABLE B**R (3.2%) is our take on an age-old style born in southern Belgium — created to hydrate thirsty field workers toiling in the fields. These low-ABV table b**rs were built simply, with whatever grains were on hand and whatever the surroundings offered. In that spirit, we use simple unmalted grains that give this wild ale its rustic edge.

True to the old-world tradition, our Table B**r is open-fermented in our French oak vat, letting the brewery’s own wild microbes take it to dryness — just as it would have been done back in the day, built for drinkability and refreshment. No temperature control here either — we let the ferment run at its own pace, giving each batch a seasonal fingerprint. Summer brings a warmer ferment, more esters and phenolics, and a slightly more sour finish. Winter runs cooler, yielding a more yeast-forward profile.

Slow-fermented in our older oak barriques, layered with a light hopping of NZ Taiheke hops and finished with a cold lagering process, it all lands dry and refreshing — with just enough bitterness to remind you it’s still a b**r.

As humble as the style itself, we’ve kept the packaging minimal and to the point. Crack it open and you’ll get a billowy head, aromatics of pineapple and lychee, and fine French oak tannins from the ferment — can-conditioned for a fine, persistent bead.

Low in alcohol. Not low in flavour. This is the b**r we reach for after a day’s work at the brewery.

Originally created in 2015 in a 750mL bottle. Now in can for ease.
