Welcome, my page! This page is dedicated to my late mother, Katina who loved cooking and baking. In our home it wasn't just about feeding us. It was about love ,bringing people together and seeing people enjoy her creations. It was about feeling good and being happy and sharing that with her family and friends .No one came to our house and left without enjoying her culinary talents. As a Greek mig

rant who arrived in Australia with her husband and two kids she used cooking as a portal for relaxing and releasing stress. She definitely passed her love and importance of cooking on to both my sister and I. I will be sharing with you some of her beloved recipes and mine also. Like most of the Greek older mums her recipes were unlike any other, with measurements made by the 'eye' ,and by the 'hand' ,and quite often by a small plate. So clearly I have had to modify the recipes to include actual modern day measurements😁

White bean Soup. ..fasolatha was a staple soup in our family..a regular during winter on a fasting day,Wednesday or Friday. Mum learnt how to make it while living in Northern Greece where my dad was from .This recipe was for her beloved pressure cooker...quick and easy cooking.
WHITE BEAN SOUP : FASOLATHA
INGREDIENTS :
4 cups white beans
1 onion ,diced
2 carrots, diced
2 stalks of Celery, diced
3/4 cup olive oil
4 tablespoons tomato paste
15 cups water.
2 teaspoons Nostimini (optional)
INSTRUCTIONS:
Place beans in your pressure cooker and cover with water,bring to the boil and boil for 10 minutes.
Strain beans.
In pressure cooker place oil, onion,carrots and Celery and saute for 10minutes.
Place beans in pot and salt.
Place tomato paste in ,mix thru.
Top with 15 cups of water.
Place on medium heat ,close the lid of the pressure cooker, and cook for 25 minutes after pressure cooker starts whistling.
Turn off .
Wait till your pressure cooker has cooled,open lid and see if beans are cooked ,if not cook a bit more on the stove.Season to taste.
Enjoy with some home-made bread,olives and feta.

So at Christmas I made a pork roast hadn't done so for years, this recipe was easy and it turned out amazing ,it comes from . All their recipes i have tried have been fabulous.
INGREDIENTS:
1 Kg Pork belly with skin on...the butcher scored mine but ask for NOT SCORED
1.5 tspn olive oil
1 tspn salt
1/4 tspn black pepper
INSTRUCTIONS:
Place pork on belly on a plate and pat dry with paper towels.
Leave uncovered in fridge overnight.
When ready to cook....
Pre heat oven at 120 degrees.
Drizzle flesh only with 1 tspn oil,sprinkle over 1/2 tspn salt,the pepper and rub all over the flesh including sides.
Place 2 pieces of foil on your work surface,place belly in the middle,skin up. Fold in sides to enclose the belly . Pinch the corners towel tightly,place on tray.
Rub 1/2 tspn oil and remaining salt evenly all over the skin surface.
Slow roast for 1.5 hours ,then tighten foil around shrunk pork. Cook another1 hour.
Increase heat to 240 degrees.
Remove pork from oven ,and place on a rack over a tray . Use balls of foil to prop up so the skin surface is level.
Place back in oven and cook for 30 minutes ,rotating to allow all the crackling to become golden brown.
Remove and rest for 10 minutes before carving.
