Save this one for your next chocolate craving. 🍫 An easy homemade dark chocolate bark:

250g Daintree Estates Dark Chocolate Buttons
A handful of pistachios
Freeze-dried raspberries or cranberries
Candied fruit of your choice
Edible gold leaf, if you fancy ✨

Melt. Spread. Scatter. Chill. Break.

That really is about it.

The dark chocolate gives you the rich base, the berries bring a little tartness, and the pistachios add that very satisfying crunch.

Easy enough for an afternoon at home, pretty enough to wrap up as a gift.

Chocolate flavour doesn’t begin with roasting. It begins much earlier. Fresh cocoa beans taste surprisingly unlike the chocolate we know. After harvest, the sweet pulp surrounding the beans fuels fermentation, where microbes, heat and acidity begin changing the chemistry inside each bean.

This is where many of the flavour precursors that later come alive during roasting are formed.

Roasting matters enormously, but it develops what fermentation has already begun. 🍫🌱

What gives chocolate its flavour? The answer goes much further than where the cacao was grown.

Terroir matters: variety, soil, climate and growing conditions all leave their mark. But once cacao is harvested, another complex world begins. Microbes, fermentation, temperature, oxygen, handling and human judgement all help shape what we eventually taste in the finished chocolate.

Origin is part of the story. The process brings that story to life.

Swipe through to explore why chocolate flavour is more than terroir. 🍫🌱

A chef’s pantry staple with a very Australian story. Daintree Estates 45% Rich Milk Chef’s Buttons are made for melting, folding, drizzling, baking and, occasionally, eating straight from the bag.

Think silky chocolate mousse dusted with cocoa and finished with berries. Warm chocolate cakes with soft centres. Rich puddings under glossy chocolate sauce. Chocolate loaf or brownie-style bakes with yoghurt, cream and tart raspberries. Or a plated chocolate dessert lifted with citrus, mint and something cold on the side.

Creamy, cocoa-rich and wonderfully versatile, our milk buttons are made with Australian-grown cocoa for home bakers, pastry lovers and professional kitchens alike.

1kg Chef’s Buttons, because some recipes deserve more than a block or two.
