Tortellini shaped by hand.

This filled-pasta gives a restaurant dish that homemade feel. Goes best with something easy like a home-made pesto or a creamy aspargaus sauce.

The last and perhaps most underrated of the Roman pastas.

To finish: Gricia

Guanciale. Pecorino romano. Black pepper. Pasta water. Butter

Often called the forgotten Roman pasta, sitting quietly between cacio e pepe and amatriciana. Rich, salty and deeply savoury, every strand is coated in a glossy sauce created from rendered pork fat, cheese and pasta water.

Have you ever tried serving ravioli with a rich jus?

Pasta and jus – balancing each other perfectly. Finish simply with freshly grated Parmesan and cracked black pepper.

Proof that a few quality ingredients is all you need.

Our next Roman Pasta: Amatriciana

Guanciale. Passata. Pecorino Romano. Black Pepper. Pasta water. Butter.

Tomatoes are the star of this dish, creating a pasta that’s bright, savoury and balanced perfectly by the richness of the guanciale.

The Roman pasta quartet.

Cacio e Pepe. Gricia. Amatriciana. Carbonara.

Four classic Roman pastas built from a handful of ingredients and generations of technique. No unnecessary extras, just pecorino, guanciale, black pepper, egg and pasta doing exactly what they’re meant to do.

Simple on paper. Much harder to get right.
