VEGGIE CHICKEN NUGGETS!
Veggie “chicken” nuggets the kids will actually eat! 🥦✨
Crispy on the outside, soft on the inside, and loaded with goodness. Perfect for lunchboxes, dinner or a quick snack. Family-approved & toddler-friendly! 🤍
Ingredients:
1 chicken breast
1/2 a cup of frozen mixed veggies (thawed)
1 egg
1/4 cup oat flour
1/4 tsp mixed spices(optional)
Panko bread (as needed to cover)
How to make:
In a food processor, combine the diced chicken breast, thawed mixed veggies, egg, oat flour, and mixed spices (if using). Pulse until everything is well combined.
Place some panko breadcrumbs in a bowl or on a plate.
Take a tablespoon of the chicken nugget mixture and form it into a nugget shape. Dip it into the panko breadcrumbs, making sure it is fully coated.
Heat some rice oil (or oil of your choice) in a frying pan over medium heat.
Once the oil is hot, add the nuggets to the pan and cook until golden brown on both sides, flipping as needed.
Remove the nuggets from the pan and place them on a paper towel to absorb any excess oil.
Serve warm and enjoy.
