CHEESY FRENCH TOAST!

Served with tomatoes, grated cheese, a peach star, pretzel stick, some strawberries and bananas on the side with a sprinkle of desiccated coconut.

Ingredients:

1 sliced bread
1 egg
1/4 cup shredded cheese
Pinch of cinnamon (optional)

How to make:

Dip bread into the beaten egg and cheese mixture.
Heat some butter in a pan and cook the french toast until golden and fully cooked on both sides on a low to medium heat.
Remove, let it cool down then serve. Cut the french toast into a triangle using a pizza cutter and decorate with some cherry tomatoes, shredded cheese etc.

VEGGIE CHICKEN NUGGETS!

Veggie “chicken” nuggets the kids will actually eat! 🥦✨
Crispy on the outside, soft on the inside, and loaded with goodness. Perfect for lunchboxes, dinner or a quick snack. Family-approved & toddler-friendly! 🤍



Ingredients:

1 chicken breast
1/2 a cup of frozen mixed veggies (thawed)
1 egg
1/4 cup oat flour
1/4 tsp mixed spices(optional)
Panko bread (as needed to cover)

How to make:

In a food processor, combine the diced chicken breast, thawed mixed veggies, egg, oat flour, and mixed spices (if using). Pulse until everything is well combined.
Place some panko breadcrumbs in a bowl or on a plate.
Take a tablespoon of the chicken nugget mixture and form it into a nugget shape. Dip it into the panko breadcrumbs, making sure it is fully coated.
Heat some rice oil (or oil of your choice) in a frying pan over medium heat.
Once the oil is hot, add the nuggets to the pan and cook until golden brown on both sides, flipping as needed.
Remove the nuggets from the pan and place them on a paper towel to absorb any excess oil.
Serve warm and enjoy.

OVERNIGHT CHIA OATS!

These overnight oats are loaded with fiber and protein, and I find them irresistible. They take no time to assemble and the recipe can easily be doubled or tripled for make-ahead breakfasts for the week.
You can both enjoy it you and your toddler.

Ingredients:

1/2 cup oats
1 tbsp chia seeds
1/2 cup milk of choice
Handful of blueberries
drizzle of maple syrup or honey
2 tbsps Yoghurt

How to make:

Combine all the ingredients in a bowl and mix well. Place in the fridge for a minimum of 4 hours but ideally 12 or more. The oats can stay in the fridge for 4 to 5 days.

HONEY GARLIC CHICKEN!

This honey garlic chicken is so simple to make and it’s ready in less than 20 minutes. It is a family-friendly dish full of sweet and savory flavors.
You must try! So delicious.

Make sure to safe the recipe. 🫶🏼

Ingredients:

3 boneless chicken thighs
S&P to season
1 tbsp olive oil
3 tbsp soy sauce
1 tbsp honey
1 tbsp minced garlic
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp cornflour
2 tbsp water

How to make:

Prepare the chicken. Season both sides with salt and pepper.
Heat the pan and cook over medium heat.
Cook for 4-5 minutes or until it is golden and crisp. Flip and cook for a further 4-5 minutes or until cooked through. Set aside on a plate.
Prepare the honey garlic sauce. Combine all the sauce ingredients together in a small bowl. Whisk to combine.
Combine the chicken and sauce.
Reduce the heat to medium. Pour the honey garlic sauce into the pan. Let it bubble and simmer for 2-3 minutes, or until thickened. Return the chicken to the pan, turning to coat in the sauce.
Slice the chicken into strips and serve over rice with your favourite veggies.

JAM STUFFED FRENCH TOAST!

Served with banana chia pudding with cinnamon and jam heart eyes and mandarin with a green capsicum slice.🎃 (ended up cutting mandarin by pieces in half)

Ingredients:

2 sliced bread
1 tsp Strawberry Jam (sugar free- sweetened by fruit juice)
1 small egg
1/4 tsp cinnamon

How to make:

Cut the two bread slices into round circles (I used a cookie cutter) then spread some jam on on the middle of 1 bread and cover with the other. Press the ends using a fork to seal.
After that dip the stuffed bread into the beaten egg and cinnamon mixture.
Heat some coconut oil in a pan and cook the french golden and fully cooked on both sides on a low to medium heat.
Remove let it cool down then serve.

FLAX OAT PANCAKES!

This flax oatmeal pancake recipe is EASY to put together and a healthy breakfast for you and tour little ones.

Ingredients:

1/3 cup all purpose flour
1/4 cup quick-cooking oats
1 Tbsp ground flaxseed
1 Tbsp greek yogurt
1 tsp baking powder
1/4 tsp ground cinnamon
1 large egg 1/2 cup milk (of choice)

How to make:

In a large bowl, combine all ingredients together very well.
Pour batter onto a hot pan coated with cooking spray; turn when bubbles form on top. Cook until the second side is golden brown.

Enjoy this one! You can double the batter and freeze some for an easy breakfast later.

EASY PUMPKIN PASTA!🎃

A quick and delicious creamy pumpkin pasta!
We all look for easy dinner recipes to feed our little one and with this healthy 10 minute meal you can serve a great lunch or dinner option.

Ingredients:

Half a packet of uncooked pasta
Around 1 1/2 cup cooked pumpkin
1 Tbsps cream cheese (heaped)
1/4 cup milk
2 tsps butter
Lots of parmesan cheese (to garnish)

How to make:

Cook the pasta as per the package instructions. Then drain the water. In a blender, blend the pumpkin, butter, cream cheese and milk.
Add the mixture to the cooked pasta. Add some parmesan cheese and put it back on heat for about 2-3 minutes until the cheese melts.
Let it cool down then serve.🤍

Both my kids loved this recipe. A healthy, super easy recipe to make on busy days that will please the whole family.

CARROT BLENDER PANCAKE!

These One Blender fluffy Carrot Pancakes are so quick and easy to whip up.
It is made with yogurt packed with protein, fruit, and veggies.

Ingredients:

1 medium carrot
1 large Banana
1 tablespoon Yogurt (heaped)
1/2 cup Milk
1/2 cup Flour
1 Tbsp Baking powder
1/4 tsp cinnamon

How to make:

Add all of the ingredients to a blender and blend on high until completely smooth. Lightly coat a pan with coconut oil or olive oil. (I used pancake maker)
Pour the batter into small pancakes. Cook on both sides until golden. Enjoy!
