Your favourite deli order, made at home. Focaccia loaded with DON Deli Cuts Shaved Leg Ham and DON Deli Cuts Mild Hungarian Salami, layered with fresh salad and a drizzle of dressing. Made at home and stacked properly.
Serves 1

Ingredients
1 generous slice focaccia, sliced down the middle
1 pack of DON Deli Cuts Shaved Leg Ham
1 pack of DON Deli Cuts Mild Hungarian Salami
½ ripe tomato, sliced
½ cup shredded iceberg lettuce
2 tbsp thinly sliced red onion
1 tbsp whole egg mayonnaise
1–2 tsp Dijon mustard
1 tbsp extra virgin olive oil
1 tsp red wine vinegar
sea salt and black pepper

Method
Slice the focaccia through the middle without cutting all the way. Keep it soft.
Mix the mayonnaise and Dijon together and spread over the base.
Layer the DON Deli Cuts Shaved Leg Ham first, folding it loosely so it looks full and airy. Add the DON Deli Cuts Mild Hungarian Salami on top.
Add the tomato slices, then the shredded lettuce and red onion. Season lightly with salt and pepper.
Toss the lettuce with olive oil, red wine vinegar and a pinch of salt before adding.
Close the sandwich and press gently to hold everything together.
Slice and serve immediately.

Need an easy lunch or breakfast on the go?
These golden tortilla bakes are filled with zucchini, DON Shaved Turkey and cheddar, with crispy edges and a soft centre.

Ingredients
(Serves 4)
• 2 large flour tortillas
• 40 g butter, melted
• ⅓ cup finely grated parmesan
• 1 small zucchini, thinly sliced
• 1 tablespoon olive oil
• sea salt
• 1 pack of DON Shaved Turkey
• ½ cup grated cheddar
• 2 tablespoons finely chopped chives

Custard
• 5 eggs
• 80 ml milk
• 1 teaspoon Dijon mustard
• cracked black pepper

Method
Preheat oven to 160°C fan forced.
Line a 20 cm springform or high-sided cake tin with 2 overlapping sheets of baking paper, leaving overhang.
Brush both sides of each tortilla with butter. Sprinkle one tortilla with the parmesan, place the second tortilla on top to sandwich together, then press into the lined tin, allowing the edges to rise up the sides.
Bake for 12–15 minutes or until deep golden and crisp. If puffing, gently press back down halfway through.
Meanwhile, heat olive oil in a pan over medium heat. Add zucchini and a pinch of salt. Cook for 5–6 minutes, stirring occasionally, until softened and the moisture has completely evaporated. Set aside to cool slightly.
Whisk together eggs, milk, mustard and pepper until smooth.
Layer DON Shaved Turkey, zucchini, cheddar and chives into the shell. Pour over custard.
Bake for 22–28 minutes or until golden and just set in the centre.
Rest for 30 minutes before removing from tin and slicing.

To Serve
Finish with extra chives and cracked black pepper. Serve warm or at room temperature.

Golden, flaky puff pastry wrapped around smoky DON footy franks, sharp Dijon and melty cheese. Baked until deeply crisp with clean spirals, then finished with fresh chives. ⁠

Serves 4–6 ⁠
Ingredients ⁠
2 sheets ready-rolled puff pastry, just thawed ⁠
8–10 DON footy franks, finely chopped ⁠
2–3 tbsp Dijon mustard ⁠
Cheese Mix ⁠
100 g tasty cheddar, freshly grated ⁠
50 g mozzarella, freshly grated ⁠
½ tsp cracked black pepper ⁠
1 egg, lightly beaten ⁠
sesame seeds or poppy seeds, for finishing (optional) ⁠

To Finish ⁠
2 tbsp finely sliced fresh chives ⁠

To Serve ⁠
Tomato sauce or extra Dijon ⁠

Method ⁠
1. Preheat oven to 200°C fan. Line a large tray with baking paper.⁠
2. Lay the puff pastry sheets on a clean bench, keeping them cold so they hold their shape. Spread Dijon evenly over each sheet, right to the edges. ⁠
3. Scatter over the chopped DON footy franks in an even layer. Sprinkle over the cheese mix, keeping it evenly distributed so the spiral stays defined. Finish with cracked black pepper. ⁠
4. Starting from the long edge, roll each sheet tightly into a log, keeping it firm and even. Transfer to the fridge for 20 minutes to firm up. ⁠
5. Using a sharp knife, slice into 2 cm rounds. Place cut side up on the tray, leaving space between each. ⁠
6. Brush lightly with egg wash and sprinkle with seeds if using. Bake for 20–25 minutes or until deeply golden, puffed and crisp underneath. ⁠
7. Remove from the oven and rest for 5 minutes. Scatter over fresh chives just before serving. Serve warm with tomato sauce or extra Dijon.

Everyday lunch or quick dinner, elevated. Creamy ricotta, fresh zucchini ribbons and DON Hungarian Salami baked to perfection on golden puff pastry.

Serves 6
Ingredients
1 sheet butter puff pastry, thawed
100 g DON® Mild Hungarian Salami
250 g ricotta, drained
1 tbsp finely grated parmesan
1 zucchini
1 tbsp extra virgin olive oil
½ lemon, zested
1 tsp lemon juice
1 tbsp fresh mint, finely chopped
Sea salt
Black pepper
1 egg, lightly beaten

To finish
Extra lemon zest
Mint leaves
Extra virgin olive oil

Method
1. Preheat the oven to 200°C fan. Line a baking tray with baking paper.
2. Shave the zucchini into long ribbons. Lightly sprinkle with salt to draw out moisture. Set aside for 10 minutes, then pat dry thoroughly with a paper towel.
3. Place the pastry on the prepared tray and score a 2 cm border around the edge, being careful not to cut all the way through.
4. In a bowl, combine the ricotta, parmesan, olive oil, lemon zest and lemon juice. Season well with black pepper. Stir until smooth and thick. Do not whip
5. Spread the ricotta evenly over the pastry, keeping within the border.
6. Arrange the zucchini ribbons over the ricotta in an even layer.
7. Lay the Don Hungarian Salami slices over the zucchini, gently ruffling slightly as you place them so they sit neatly on top.
8. Brush the pastry border with beaten egg. Bake for 20 to 25 minutes, or until the pastry is golden and puffed.
9. Finish with fresh mint, extra lemon zest and a light drizzle of olive oil. Serve warm.

A classic ham sandwich, the DON way.⁠
Soft bread layered with crisp lettuce, ripe tomato, sharp cheddar and generous slices of DON Shaved Leg Ham. Full of flavour and made for everyday lunches.⁠

Serves 2⁠
Ingredients⁠
4 slices soft white sandwich bread⁠
100 g DON® Deli Cuts Deli Leg Ham⁠
4 slices cheddar cheese⁠
1 ripe tomato, thinly sliced⁠
Crisp cos lettuce leaves⁠
Butter, softened⁠
1 to 2 tsp mustard⁠
Freshly cracked black pepper⁠

Method⁠

Ham and Tomato Mini Pizzas loaded with shaved DON Leg Ham, a jammy tomato base and golden bubbling cheese.⁠

Serves: 2 (4 mini pizzas)⁠
Prep time: 5 minutes⁠
Cook time: 6–8 minutes⁠

You’ll need:⁠
• 100g DON Leg Ham Shaved⁠
• 2 English muffins, split (4 halves)⁠
• 1/4 cup tomato paste or pizza sauce⁠
• 3/4 cup grated mozzarella or tasty cheese⁠
• 1/2 tsp dried oregano⁠
• 1 tsp olive oil⁠
• Fresh basil, to serve⁠

How to assemble:⁠
1. Preheat your air fryer to 180°C.⁠
2. Spread each muffin half with tomato paste, drizzle with olive oil and sprinkle with oregano.⁠
3. Add DON Leg Ham Shaved and top with grated cheese.⁠
4. Air fry for 6–8 minutes or until melted, bubbling and golden.⁠

Introducing DON Ham & Cheddar Lunchbox Toastie Pockets⁠

Crisp, sealed toastie pockets with melted cheddar and DON Champagne Shaved Ham tucked inside. Designed for little hands, these golden toasties deliver familiar flavour in a neat, no-mess package perfect for school lunchboxes.⁠

Serves: 1 (makes 1 toastie pocket)⁠
Prep time: 3 minutes⁠
Cook time: 2–3 minutes⁠

Ingredients⁠
• 2 slices bread of choice⁠
• 1 slice cheddar or tasty cheese, quartered⁠
• 1 slice Don Champagne Shaved Ham⁠
• Fruit + veg sticks, to serve⁠

Method⁠
1. Place one slice of bread on a board. Arrange the cheese pieces in the centre and top with the Don Champagne Shaved Ham.⁠
2. Place the second slice of bread on top, pressing gently to flatten slightly.⁠
3. Use a round cookie cutter to cut a circle through both layers, removing the crusts.⁠
4. Press the edges firmly with a fork to seal.⁠
5. Toast in a bread toaster until lightly golden and crisp, about 2–3 minutes depending on toaster strength.⁠
6. Cool slightly before packing into a lunchbox. Serve with fresh fruit and veg sticks.⁠

Notes⁠
• Sealing the edges prevents cheese from escaping during toasting.⁠
• Cutting into a circle avoids thin corners that burn in the toaster.⁠
• Allowing the toastie to cool slightly keeps the bread crisp in the lunchbox.
