Here's a sneak peek at Rattler's, the latest from the affable and talented team behind Deadwood Dromana.

A honkytonk bar built on good old fashioned hospitality, with live music and a soundtrack running through country, bluegrass, folk and Americana. Step inside and the glow of neon and those country saloon vibes hit straight away, the kind of mood that transports you somewhere completely different the moment you walk in.

The drinks list leans hard into seasonal and native produce, with whiskey carrying a strong presence across the menu (obviously), built for a room that already knows it's in for a good night.

That's exactly the kind of mood we love seeing in a bar.

Stand by for the good drinking content, it's coming.

It's here. The sound we've been waiting for.

Bar Kaeru brings food and sake come together in a way that feels generous, intimate and alive, shaped by its own rhythm and made for the people who gather around it.

This one from Sean Then leans into the Futuristic Sounds of Sun Ra, a fitting match for a modern landing sake. Senkin's Classic comes out of a 1806 kura in Tochigi, with both traditional and modern techniques , not overly sweet, with good creamy texture and a bitter lemon pith finish.

It's an immersive pairing.

Meet Max, serving up the sparkling goods.

We've taken the short and worthy trip down to Victoria's Mornington Peninsula and landed at Bon Vivant, a beautiful bar with a seasonal cocktail menu that heroes Australian spirits.

The Pisco Punch is delivered with Bass and Flinders eau de vie, pineapple and lemon, built up with Dave Arnold's champagne soda technique from Liquid Intelligence and a finsihed off with a Guava foam straight off the nitro canister.

It's masterclass class in technique done well with carbonation handled the right way, the ice and glassware on point. It follows some of the best guidance on ex*****on we've seen in modern cocktail making. (credit again Dave Arnold)

Smashable is the word for it, another great example of quality when you step outside the city.

At Longrain in Melbourne, bar supervisor Edward Wareham built Fire Soul to sit alongside the Thai cuisine, not just next to it. Orendain Blanco Tequila, sake, cranberry and pomegranate, bird's eye chilli, saké and pickled radicchio, stirred down into something full bodied and structured enough to hold its own with the punchy flavours being served up on the plate.
