Our team got to experience it firsthand, meeting the people behind the venues, products and stories that make the state so distinct.

We look forward to becoming part of that landscape, continuing to learn from and collaborate with the operators, producers and venues that make Tasmania's unique brand of hospitality.

Here's a swiping recap of our time at Lark.

They make incredible drinks, and it's no surprise why. For more than 30 years, the brand has sat at the forefront of Australian whisky, helping shape the category from Tasmania and beyond, the direction steered by the Godfather Bill Lark himself.

What stands out is their evolution. From the venue experience through to the liquid itself, there's a presence of the drive to create, collaborate and push the boundaries.

This is a lighthouse venue for Tasmanian whisky and hospitality. A place that celebrates the people, stories and craftsmanship behind one of Australia's most iconic whisky brands.

The Designer by Urbane

Coffee, great whisky, chocolate and a venue that lives in the detail. From the glassware to the garnish, everything at Urbane feels considered without trying too hard. So considered, in fact, this cocktail is dedicated to their own interior designer.

Led by Venue Manager Locy Hemsley, this is Tassie hospitality with intention. Intimate, local at its core, and the kind of bar that feels transformative from the moment you step through the threshold.

This is an experiential pairing that’s nailed the brief. The kind of tune for your ears and wine for your mouth that carries you from the front door straight into a night for a boogie.

Spinning in from Campbell Nicol via Rude Boy Hobart. It may not take itself too seriously, but it is seriously good and, as our curator said, it makes you want to take another sip, which obviously lends itself as a delicious party starter.

Fire up the record player and sip back with this funk from The Bamboos and wine by Dr. Edge.

It’s a week for whisky and more is definitely better.

This was a pretty special drink to sip and honestly, no surprises. The juice inside it, Callington Mill’s Amphora Tasmanian Single Malt has just picked up Gold and been named Australia’s Best Single Malt Whisky at the 2026 Awards. To have it mixed up in front of us for this elevated serve was a top hospitality experience.

Set within the iconic MACq 01 on Hobart’s waterfront, Callington Mill continues to show why Tasmanian whisky is having a serious moment.

The Good Old Fashioned Chinwag started with a simple idea. Create a genuine way to connect with trade through something built for hospitality, by hospitality.

From there, a bunch of good people added their part to it.

Rude Boy Hobart helped shape the recipe and brought the right amount of Tassie personality into the serve. Hellyers Road and Punch & Ladle brough the juice, and Curatif helped bring the final product to life.

The expression of the branding then came through our creative partners at Milkman Agency, helping give the drink its identity.

A chinwag over an Old Fashioned is a pretty time-tested tradition. This was our way of bringing that idea to life in a format that felt a little different.

In lieu of World Whisky Day, here’s this banger from The Still by Lark Distillery. A lighthouse venue for Tasmanian whisky, with 350 bottles lining the back bar and an iconic space where Tasmania’s world-class spirits take centre stage. This is a very aesthetically pleasing place to have a proper drink, and a proper drink is what you'll get.

Their twist on the classic Penicillin leans tropical and homely, blending Lark Tasmanian Peated Whisky with Ardbeg’s iconic Islay peat for a smoky sip that still feels warm and welcoming.
