Natural filtration takes time but the results are worth the wait.

After pressing, most producers filter immediately or bottle cloudy. We do neither. Our oil rests in stainless steel tanks, protected from oxidation, where gravity does the work. Microscopic water droplets and olive particles settle naturally to the bottom before we rack and transfer only the freshest clear oil into clean storage where it waits until bottling for orders.

It’s a slower process. We sacrifice a small amount of oil in the process. But the result is an oil that maintains its polyphenol levels as close to harvest levels as possible; not just in the first weeks, but for the year ahead.
